Ingredients

  • 1 tbsp olive oil

  • 1 chicken breast, cooked

  • 2 cloves garlic, crushed

  • 500ml low salt bouillon powder

  • 200g soft noodles

  • 1 handful mixed vegetables, eg red peppers, beansprouts, mushrooms or carrots

Method

  1. Cut chicken into thin slivers then gently fry in olive oil for 4 minutes.
  2. Add the garlic to the frying pan.
  3. Put stock in a separate pan and bring to boil, then add the noodles, chopped veg and chicken breast.
  4. Simmer for 10 minutes, then season and serve.

Handy Hint

This is like a noodle broth, that my children absolutely love. I add a little bit of chilli now that the children are older which spices it up a bit!

    Excellent recipe - my 9 yr old dd loved it and it is a challenge to get veg into her, dh liked it to, I had a lot of chicken and veg in it so used pint and a half of stock and thickened this with table spoon of cornflower, i put another stock cube in to. We are having this again!

    Would it be possible to enhance the recipe by inserting the missing sections such as 'serves, cook time and prep time'?
