Mushroom pilau rice

Ingredients

  • 1 splash olive oil, (or butter, or ghee)

  • 1/2 tsp salt

  • 5 bay leaves

  • 2 cloves

  • 160g rice

  • 1 tbsp garlic, crushed

  • 1 bunch coriander, (optional garnish)

  • 14 large mushrooms

  • 2 onions

  • 590ml water

Method

  1. Heat the oil/butter/ghee in a wok or pan.
  2. Add the mushroom to the oil and fry until brown.
  3. Add the onion, spices, bay leaves and garlic and lightly fry for a few minutes.
  4. Add in the raw, uncooked rice and mix it around in the vegetable and spice mixture until the rice goes clear.
  5. Add the salt to the mixture.
  6. Add in add in water, cover with a lid and cook the rice until tender.
  7. Garnish with fresh coriander and serve on its own or accompanying another dish.

Handy Hint

If you often burn rice in normal pots, and have a rice cooker, then simply transfer the contents after frying everything, then add in the water and cook in rice/slow cooker. You can adjust the garlic/salt to how much you like. I think bay leaves are an essential ingredient in this dish, and cloves: they are required, but don't use too many or they might overpower the taste.
