Ingredients

  • 100g cheddar, grated

  • 3 tbsp balsamic vinegar

  • 1 red onion, thinly sliced

  • 1 red pepper, sliced

  • 2 courgette, sliced

  • 2 tbsp honey

  • 500g puff pastry, or one pack

  • 1 aubergine, sliced

  • 12 mushrooms, sliced

Method

  1. Drizzle all the sliced vegetables with the balsamic vinegar, honey and a drizzle olive oil and place them on a baking tray in the oven for 20 minutes.
  2. While they are cooking, prepare the pastry by rolling it out onto a baking sheet, brush the pastry with milk and then fold the edges up as a border and to stop the vegetables going everywhere.
  3. When the vegetables are ready, take them out and position them on the pastry and place in into the oven for 15-20 minutes.
  4. Take it out and sprinkle grated cheese on top and place back into the oven for another 5-8 minutes.
  5. Then serve with salad.
