Nice hotel in Devon to suit all ages

My Grandfather has decided he would like to take the whole family away for a few days - week in the spring. We are thinking of Devon. There will be:

Me and DH with DS (who will be nearly 3 by then)(
Brother and SIL (no kids)
My parents
89 year old Grandfather

Would like hotel to have
a pool if possible,
definitely a nice restaurant, but not too OTT
baby listening (Or small enough for monitor to work in restaurnat)
would be good if it was the kind of place Grandpa could sit and watch the world go by/ read the paper/ have a little walk, as he gets tired easily
On or near the beach
Nice places nearby to visit

A tall order I know but any ideas gratefully received! He is paying (hooray!) and think the budget is fairly open!!
