Stuck for holiday activity ideas?

My family and I are going to a very remote pace for the summer this year (think no internet, no phone etc.). My DS is athletic and is happy entertaining himself with a basketball for the day, or doing more active family activities, whereas my DD is more of a reader and prefers to lie on the beach rather than swimming all day. However, she has recently told me that she gets very bored at times with the usual kid mixture of wordsearches, my sudoku books and a couple of school textbooks to read (as well as "fun" books too, don't worry, the school books are the minority!). They are "too easy" for her and I have been trying to search for some other activities she can do with no luck.
Any suggestions? So far, I have tried knitting (definite yes), teaching me to play her instrument (maybe), painting (too hot in the country), and using language learning websites (but no internet nearby or in the house). She reads a lot already so I was hoping for something more practical.

Sorry for the paragraph, but I hope this is enough info!

Good idea, we bought a family camera a while back and no-one quite knows how to use it, but I am not so sure she would be into anything other than the actual photo-taking!

Writing a holiday journal or series of short stories.

Painting.

Cooking/baking.

Craft project - making something useful.

All stuff my DC have enjoyed over the years.
