Tonight on BBC 2 at 8pm the "Great British Food Revival" is talking about potatoes and with this in mind Potato Council would like to hear about your best tips for cooking with potatoes and recipes featuring potatoes and to then include them on their Mumsnet hub (coming soon). In case you didn't know: "Potato Council is part of the Agriculture and Horticulture Development Board working on behalf of British potato growers and purchasers to promote potatoes. We are funded through a statutory levy on 3,000 potato growers and potato trade purchasers and we aim to support the British potato industry."

Potato Council say that potatoes are "low in calories, they're naturally fat-free, bursting with vitamins and minerals, contain absolutely no cholesterol and when served with their skins are a great source of fibre"

They are going to be having a special page on Mumsnet soon and would love to feature some of your own recipes and tips for cooking for the family (and yourself) using potatoes.

Please share them here - everyone who adds tip or recipe to this thread will be entered into a prize draw where one lucky winner will win a £100 Sainsbury's voucher.

Potato cakes (but different)

Fry chopped onion in soy sauce until soft

Add cold mashed potato

Mix well

Carry on heating the frying pan until the bottom is brown slide out on to a plate & turn back in the pan to brown the other side

Serve with relish

Terrific. I think potatoes could be my desert island food - you can do so much with them.


I like 'mushy green pie' (it has many other names).

Cook the potatoes in a pan on the hob, as you would for mash.
A couple of minutes before they're ready add some chopped greens/spinach
Drain and mash together
Stir in some finely chopped onion and a tin of mushy peas
Layer in an ovenproof dish with grated cheese - finish with a top layer of cheese.
Bake in the oven til hot throughout (gas 6, ½ hour ish)

Use leftover mashed potato to make gnocchi or potato cakes. Mash and mix the same amount of plain flour as potato, then:

For gnocchi, form into walnut sized balls (have floury hands to stop it sticking) and put into a pan of boiling water. As soon as they rise the top...about 2 minutes...drain and serve with tomato sauce, grated cheese or roasted veg.

For potato cakes, form into flat little cakes and fry in butter until they are golden brown on both sides. Serve with fry-ups or by themselves. Yum!

quarter
put in roasting tray with chicken portions (with skin on chicken still)
sprinkle with olive oil, oregano and garlic salt

eat and go haaaaa haaaaaaaaa in your daughters face with your garlicy breath

Potato Wedges - love these as an evening snack

Cut potatoes into wedges (we tend to use small, new potatoes) and put on a microwavable plate
Stick oven on highest temp.
Blast in microwave for 10 mins on full power
Tip onto baking tray
Drizzle with oil (groundnut oil seems to work best)
Sprinkle with salt and black pepper
Cook until they look nice Grin

Potato pizza - It is lovely, honest!

Prepare base - 225g strong flour (preferably 000, 1/2 tsp easy blend yeast, 1/4tsp salt, approx 150ml warm water. Combine ingredients to soft dough. Leave to rise for 30-60mins (no need to knead).

Preheat oven to 220C

Thinly slice potatoes using mandolin, box grater or food processor. Toss with olive oil, a little sea salt and some thyme or fresh rosemary.

Roll or stretch out pizza dough thinly onto baking sheet (oiled) or hot pizza stone. Scatter over potato slices and bake for 10-12 minutes.

Oven roasted baby new potatoes

Wash the potatoes well, put them in cold water, bring it to the boil for 2-3 minutes, then drain.

Put the potatoes on a baking tray and drizzle with olive oil, sprinkle with sea salt and cracked black pepper.

Cook in a hot oven for 20 minutes.

Add 2-3 cloves of garlic, a sprinkle of basil and thyme. Stir.

Cook again for 15 minutes.

Eat loads. Grin

Peel Potatoes and keep the skins,
Par boil for 15/20 mins depending on size,
Drain and let them stand for a few minutes in the pan,
smother with semolina and shake them around in the pan for even (ish) coating.
Roast at 220 in the oven for an hour turning once, for the most scrummy roasties ever! :)

Pat the skins dry and then toss in some olive oil, salt and pepper, place on a baking tray and let them crisp up for around 35 minutes at 220,
Let them cool and enjoy them with garlic and herb dip/Tzatziki/tomato salsa.

No waste in this house :o

Cheesy potato bake

Thickly slice 5-6 large-ish floury potatoes

Grease a casserole dish

Pour a bit of single cream in the bottom, add salt & pepper.

Add a single layer of potato. Sprinkle with grated strong cheddar. Pour on some single cream, salt & pepper.

Repeat until all the potato is used up. Top with grated cheese.

Cover and cook at Gas 6 or equivalent for 1 1/2 hours. Uncover for the last 15 minutes.

Potato tip.

When making tortilla (spanish omlette) do not try to fry the potatoes in the pam. It will take forever. Also do not pour your eggs over the potatoes + onions, you won't get a nice covering and will have to use lots and lots of eggs.

Fry onions in the pan, dice and boil the potatoes til soft. Drain, add to pan and mix around. Beat eggs in v large bowl, add potatoes + onions to the bowl and mix around. Return to pan, cook until egg is solid.

Coffeegonecold - what an ace potato skin tip, definitely going to try that.

I love part cooking a baking potato in the microwave after crossing the top, then into a heated oven for 5 or ten mins. Scoop out the inside, mix with dash of milk, pepper and Philly, the chives one is good for this, pile back into the potato shell for another 5 mins. Ultimate comfort food.

Mini roasties....chop several potatoes into small cubes, with skins left on, and boil for a few mins until partly soft.
Cover the bottom of a roasting dish with olive oil and place high in a hot oven.... when warm, pop in the potatoes, stir them into the warm oil and sprinkle dried thyme over them.
Place in hot oven for around 20 mins, you may need to stir them half way through.
Delicious with a roast dinner!

Oh I love, love, love potatoes. They would be my starch ever day if I could get away with it. My recent favourite recipe is a Nigel Slater one from Tender Volume 1 which is a sort of Scandanavian potato salad with beetroot and raw onion and pickled herring. Yum, yum. But I'll acknowledge that it is probably of limited appeal Grin

A life ling favourite is Afrikaans Potato Salad.

Peel, quarter and boil potatoes until cooked but still firm. Put aside. Meanwhile fry streaky bacon, cut into small bits, in a non-stick frying pan. Combine 3 parts mayonnaise, 1 part lemon juice and 1 part salad cream. Mix all ingredients together. Raw onion and or boiled egg may be added according to individual taste.

The salad cream is essential as it adds a slight, sweetishness to the dressing.

I enjoy livening up mash too by either adding a coupling coves

I enjoy livening up mash too by either adding a couple of cloves f garlic to the boiling potatoes or mixing in strong flavoured cheddar/Parmesan cheese to the mash once cooked, for garlic or cheesy mash. It adds an extra depth of flavour to bangers and mash or cottage pie.

I love potatoes. Smile

For lunch today I had jacket potatoes, with cottage cheese and chives mixed up with grated vintage cheddar and chopped up smoked ham. Yum!

I don't make it so often, since the kids won't touch it, but I love potatoes boulangere. I slice an onion or two and soften in a little oil and butter on a low heat, with a little salt, plenty of black pepper, a pinch of sugar and a few thyme sprigs for 15-20 minutes or until they've started to caramelise (without burning). I layer them up with very thinly sliced potatoes (not too starchy, or else they fall apart when cooked) in a shallow oven dish and then pour over chicken or vegetable stock until it comes up level with the top layer of potatoes and bake for anything from 40-60 minutes alongside whatever else I'm cooking, until it's all soft inside and golden on top.

Griddled Potato and Chorizo


500g Charlotte potatoes, thickly sliced
1 tbsp olive oil
225g chorizo sausage
1 bunch spring onions, cut into 2cm pieces
4 medium eggs

Place the potatoes in a pan, cover with water and bring to the boil, simmer for 5 minutes. Drain and stir in the olive oil.
Fry the potatoes in a griddle pan for 6-8 minutes until golden.
Slice the chorizo and spring onions and cook for 3 minutes in alrage frying pan then stir in the potatoes.
Poach the eggs in boiling water and place on top of the potato mixture and serve

Delicious served with crusty bread Smile

STEW of course!

its pretty much throw whatever in the pan but here's what i do

potatoes, carrots lots of onion, peas in a tin - the pea juice and sugar content make the difference trust me. add the meat of your choice - i use beef steak but into chunks

cover with bouillon or other beef stock

cook on a low heat for as long as you can.

i don't add salt as i don't think it needs it
i add lots of pepper and serve with sliced french bread

I LOVE slicing potoatoes into a dish, flaking smoked peppered mackeral over it, covering in cream garlic and splash of milk and baking in the oven. Serve with peas or salad.

I also adore Nigella's spanish chicken and chorizo recipe which is chicken, chorizo, new potatoes and onions chucked in a dish sprinkled with oregano and orange zest and a good glug of olive oil.

Cheesy tato bombs.

Oven bake your spud and then cut in half and scoop out the middle, mix the removed potatoe with butter, salt and beans, scoop back into potato skin and sprinkle with cheese and put back in the oven for 10 minutes.

Simple but really yummy!
