I have a few of the books but not all and would love to get some more ideas :) This recipe is from the Fakeaways book.

My current favourite: Thai Green Curry (serves 4, 1.5 syns on EE)

Fry 4 chicken breasts or 8 chicken thighs in Frylight with 2 tblsp Thai Green Curry paste. Cook for 3 mins. Add 100ml of red fat coconut milk and 600 mls chicken stock, bring to boil then cover and simmer for ten mins. Add 400g of frozen mixed veg, bring back to the boil and cook for another 7 mins. Chuck in some fresh coriander at the end if you have it (gorgeous but fine without it if you don't have any) and recipe says to add 2 tblsps soy sauce but I don't bother because it's already salty from the stock. Serve it up with jasmine rice.

Tips: You can fry in oil and add extra coconut milk but it ups the syns.

Our current fave is hunter's chicken, so comforting.

Butterfly a chicken breast, spread with syn free BBQ sauce (I use the sauce from this recipe but without the sweetener -yuck), two slices of bacon on top and a Hex A of cheddar. WhCk in the oven for 25 mins and finish under the grill to crisp bacon. Serve with wedges and salad.

Oh wow that sounds gorgeous, thanks. And I am so with you on the sweetener thing. I would rather use sugar and syn it or do without!

Anyone else want to contribute a recipe? I made the Goan potato soup and it was lovely I am happy to post the recipe if anyone is interested!

I love this chicken stir fry as it feels like I'm having a takeaway (I even serve it in the foil carton things you get from takeaways!)

Chicken
Pack of stir fry veg
Dried egg noodles
4 tbsp soy sauce
2 tsp balsamic or white wine vinegar
4 crushed garlic cloves
1 tbsp grated ginger
1 tsp Chinese 5 spice
Bit of water

Cook the chicken in a wok.

Cook noodles as directed.

Once both cooked, add the veg to the chicken for a few minutes.

In a bowl mix the rest of the ingredients.

Once the veg is done, add in the noodles and sauce, stir through.

Easy peasy and delicious!

Depending on how much chicken/veg/noodles you have, either increase/decrease the sauce ingredients or else it may be to dry/wet.

I love the Indonesian chicken and red pepper curry. But to be honest most of the recipes I do are from bbc goodfood and I adapt.

With you on the sweetner thing I'd rather leave it out or syn sugar!

Have you tried this summer breakfast recipe? I love it.

In a jar layer up 50g natural porridge oats,chopped fruit such as strawberries, raspberries, nectarine, fresh or frozen, and any muller light yoghurt. Keep in the fridge overnight and the oats will have absorbed the yoghurt. Stir and eat. My favourite is fresh strawberries and cappuccino yoghurt.

It's in the Asian book and I think it's malaysian not Indonesian either way it's yummy. The Asian book is the only one I really use!

Lentil and bacon soup.

1 mug of split red lentils
1 400g tin if chickpeas (drained)
2-3 carrots
4 slices of smoked bacon (all fat removed)
1 onion
2 cloves of garlic
1/2 a small swede
The beans from 10 broad bean pods
1 chicken stock cube.

(Can substitute the chick peas for potatoes and add any different veg, herbs/spices you fancy)

Chuck it all in the slow cooker, pour in enough boiling water to cover all the ingredients. I cooked on high for 1 hour then low for 6.

Turns out really thick and creamy. No need to blend. Lovely with lots of black pepper. Even the hubby liked it and asked to take some to work!
