  • ricotta, cherry tomatoes cut in half, rocket. You only need a little oil at the beginning for the tomatoes, but you can even use water instead. Then add the ricotta, that will melt a bit, the past, and at the very end the rocket. Do not cook the rocket, just mix it to all. Lots of pepper on top at the end to spice it up.

  • boil broccoli florets for 5-10 mins, loads, and then in the same water and with the broccoli cook the pasta. Better if orecchiette. In a separate pot heat oil, as much as you want really, with anchovies and garlic if you like it. As soon as the anchovies melt take it off the gas. Drain pasta and broccoli together, add the anchovies. The broccoli will have melted a lot and will form a puree/saucy type of condiment.

  • red and yellow peppers. Fry then until soft with some oil/water. Blitz if you like the idea, and put on pasta with a little/as much cheese as you want.

Does this help?

There is a recipe in the "little book of sauces" - lots of good things in there, I had never made a stir fry sauce myself before I got it - the one with Mango in is lovely.

You can make a proper carbonara - it's just eggs and parmesan. Just make sure you have it with a big salad. Tastes really creamy and decadent.

Most of the time I make a big batch of red pepper or tomato based sauce and freeze. Then serve that with meatballs or bacon / gammon and some cheese on top.
