penguinmum's creamy fish pie: smoky, seasonal fish in a creamy white sauce with grated, rather than mashed, tatties on top - a meal of the highest comfort-food order.
I like Eve's pudding which is similar. Put sliced apples and sugar into a casserole dish or pudding basin (you could stew the apples first if preferred). Cover with basic cake mixture and cook in the oven until done. Serve with custard or hot with ice-cream.
You can also make it with any other fruit filling.
sounds gorgeous. Have you ever tried it with cooking apples, or will they go too mushy? We have a cooking apple tree so always on look out for new recipes. Will try this with eaters anyway
have made this lots of times and its always good. made one for DH for Fathers Day and he scoffed the lot just make sure butter is very cold or it will not crumb but turn to cake mix IYSWIM
750g eating apples 80g golden caster sugar icing sugar[for dusting]
preheat oven to 190C use loose bottom 20cm cake tin 9cm deep
put flour, sugar, almonds in food processor. add chilled butter. must resemble crumbs - butter MUST be COLD to do this. press half the mixture in the bottom of the cake tin. peel, core and slice the apples, toss with 80g of sugar in a large bowl. spoon the fruit over the base. tip the rest of the crumble on top and level. it will fill the cake tin but goes down as it cooks. bake for 1 hour until the top is golden and crisp and juices are bubbling at the sides. run a knife around the collar of the tin and allow to cool. dust with icing sugar and serve with cream/ice-cream/custard or on its own.
