Me again. I need some fave vegetable ideas.

Dh and I run two nurseries. I am the cook. I need some ideas for vegetables to go with dishes, apart from potatoes and sweet potatoes. Our littlies like sweetcorn, broccoli, carrots, green beans, baby corn, sugar snaps and mangetout. They'll go for spinach and courgettes if they're incorporated into a dish (canneloni, fish bakes, veggie pastas etc. They also like raw 'finger veg' peppers, cucumber etc.

Any other ideas? I'd like to try some more hot vegetables. Which do your littlies like?

Do you want actual recipes or more veg?

Ours (inc my mindees) love sprig veg linguine, its got courgette, red pepper, onion, carrot...

mini veg kebabs (as in poker style not doner!)

sweetcorn fritters? my ds has loved these since he could eat! its really just mashed potatoe and lots of sweetcorn baked or fried... yummy!

More veg lunavix. I'm fine at incorporating veggies into dishes. Littlies will eat anything if it's blended and they can't 'see' what it is. I just want them to get used to eating vegetables as they are. IYSWIM.

Roast parsnips sound good. I love them and when they're roasted they caramelise which is yummy. Veggie kebabs we've tried but they have a fear of onions, unless they're hidden.

I love spring greens and I've tried them with the children but they're just too 'green.' Even with butter. I s'pose I could do chinese 'seaweed' but I try to steer clear of deep-frying as much as poss.

Broccoli cheese v popular with ds (nearly 4) and dd (six months). Also mixed veg in a cream sauce with bacon.
