This month, James Martin has sent our MN Potato Councillors another of his delicious recipes, created especially for manyfacesofpotatoes.co.uk - Fish Cakes with Lemon & Basil Mayonnaise, ready in 30 minutes from prep to plate. The Councillors have been challenged to cook the dish for their families and share their feedback on this thread.

Manyfacesofpotatoes.co.uk say "This is the final thread for the MN Potato Councillors, so we've decided to add a bit of a twist and we're asking that our Councillors' children get stuck in too! Of course health and safety is everyone's number one priority, so we're not asking that they boil the potatoes or fry off the cakes, but getting them involved with the prep, like mashing the spuds or folding the mixture, could be lots of fun".

What's more, they are asking that, where possible, the Councillors post feedback on this thread on behalf of their children too. Please let us know: whether they enjoyed making the dish with you and what they thought of the taste.

As always, we want to give the entire MN community, and in this case your children too, the option to taste and review James' fish cakes so, even if you're not one of our MN Potato Councillors, feel free to try James' dish this week and add your feedback on this thread. If you are unable to try it please let us know your own fishcake recipe or share what you would normally serve them with.

Do tell us: how easy it was to cook, whether your family enjoyed it and if you added your own twist to the cakes - maybe you already have your very own family favourite fish cake flavour?

I have absolutely LOVED taking part in this "promotion", we have tried some unusual, delicious recipes that I would never ave thought of or tried, and I am a life long potato lover!

We have managed to convert my son, the life long potato hater of the family - he now tries foods with mash involved in them (fishcakes, shepherds pie etc) and will have a small amount of mash with a few meals!

The fishcakes were a real winner - the idea of getting the children involved was great as I only tend to bake with my two. (am in the process of adding a couple of photos of them in action!)

They were very easy to cook, I was surprised how little potato was involved, didn't believe it would be enough with the salmon, but it was! I was also surprised not to have to cook the salmon either, and was concerned it would be raw but was wrong again!

I did the potato (it was only one for the weight!) and the salmon, and the children did the spring onions and herbs and lemon. They really enjoyed chopping the onions and herbs and frying the onions off.

It was unbelievably simple, the children mixed it all together nad made the fishcakes. I made the mayo (the cheats way with bought mayo and added lemon and fresh basil!).

My daughter isn't a fan of salmon so wouldn't try them, my son ADORES salmon and to be honest, there was in NO WAY enough as a main course for 4 people and I couldn't see where it might have suggested it as a starter. It did make 8 fishcakes, but they were very small. For the amount of salmon I would up the potatoes etc and try and spread them a bit further.

However we all really enjoyed them, I make haddock fishcakes a lot but have never used salmon and not havnig to prcook the fish was a real bonus to me.

The children very much enjoyed helping out, and will definitely be doing so again. They loved chopping the most (was a bit heart stopping for me, as I only have very sharp knives!) and stirring of the onions.

Ann, your mayo recipe says 1 egg - is this the whole egg or just the yolk? I have never made mayo with a whole egg before Confused and would hate to put my kids off home made mayo!

I am always surprised at how easy and tasty fishcakes are. They are a good way to use up leftover fish and the dcs love them. I will have a go with raw salmon and see if I like it.

We made this last weekend for Saturdays dinner. My 12 year old DD measured the ingredients out, fried the onions with the herbs, shaped them into patties and made the mayonnaise which didn't leave me a whole lot to do.
I don't usually weigh ingredients when cooking so find it quite difficult to stick to the recipe. The measurement for the lemon juice was too much so they were very lemony, we did try shallow frying them but they just kept falling apart so we "baked" them in the oven instead which made the outside nice and crispy.
The mayonnaise was an absolute disaster, very runny and tasteless. We tried adding more seasoning and herbs but it really didn't make much difference.
DD said "I found the recipe was very easy to follow, as the mayonnaise didn't work out I had the idea of using Sour Cream and Chive dip which worked really well and made the meal. "
We have both enjoyed taking part in this product testing and trying out new recipes.

I struggled with the mayo too so resorted to my normal egg yolk version with the added the herbs etc and it was delicious. DD1 (3.5) helped with chopping, squishing and shaping then we baked ours (after reading Moomoo's comments. They went down a treat and are going to make them when grandma comes for supper next week!

We had the fishcakes for tea on thursday, they were a big success despite the fact that I don't like fish! i tried to get ds to help me with making them but he wasn't interested i'm afraid and too tired after school. Like another poster I was surprised at how little potato it took to make 8 fishcakes.

It would have been helpful if the recipe had asked you to chill the cakes before frying as i did find they fell apart a bit. On the whole though they were easy to make and the whole lemon and zest made them very tasty as did the oodles of butter that you fry the spring onions in!

i made the mayonnaise and the only thing i changes was that i added half the recommended amount of oil. I initially thought it had been a disaster as when i poured it into the pot it was very liquid however once it had been in the fridge for half an hour it thickened up and was delicious with the fishcakes. I will be making these again as everyone enjoyed them! Next time would add more potato to make more cakes.

We too have enjoyed this little experiment, dd has been really excited to find out each month what recipe we are doing and ds has showed slight interest though he isnt a potato fan he has likened to them when thinly sliced or mashed with his favourite salmon. He did have a massive sigh and yelp when i told him this was the last one then he complained it was because he loved the salmon fish cakes (you just cant win!)

The dc are still flat out refusers of mash and ds is still a refuser of chips but this whole process has encouraged some variations and they have eaten them for the purpose of research, it has made me consider other ways to get potato into a meal.

With this recipe neither of my two were keen to get involved with helping prepare unless they got to lick the bowl like when making cakes so that didnt help. DS stomped out of the way but after some persuasion dd got involved inthe mashing bit and shaping and having been involved in the cooking of tea was desperate for them to be a hit - i wasnt to keen i will be honest as was not dh as a bit lemony but for the chefs sake we made out they were devine.

We did cheats mayo too.

Shop bought fish cakes dont go down in our house well either - i think its just one of them meals that doesnt excite us.

I am going to go back through the recipes we didnt get to try and try them all at some point, especially the more potatoey based ones like curried pots etc..

This was very easy to cook. My 7 year old helped and did most of the prep himself, his favourite bit was shaping the fish cakes and getting all messy!
I did the cheats mayo as I was being lazy Blush.

Have to say that this is the first recipe that we weren't at all fussed about. I definitely wont be making them again. My DS1 usually eats anything but only ate a little of this and didn't want the rest. VERY unlike him as he loves salmon. My DH ate all his but only so as not to waste them, he wasn't keen on them either. I think they found them a bit bland. I didn't eat them as salmon is evil. I can't eat pink food. [weirdo emoticon]

Like noyouhavehadawee I'm going to go back through the other recipes I didn't try previously as we've like all the others.

My boys love fishcakes at the best of times, and my twin 11yr old boys managed to prepare and cook this last one for the most part by themselves with me supervising (and refereeing the arguments!) The kids didnt have it with the mayonaise, as they absolutly hate the stuff in any shape or form, but just lemon juice, and this small deviation did not stop them from enjoying the recipe. My DH and I found them a bit on the bland side, and perhaps will add a small amount of paprika of something simular to spice them up a bit next time, but we will have them again, as my "mini masterchefs" have insisted!

I'd never made fishcakes before so this was a new challenge for me. I did let the kids help (scissors for the spring onions) and their involvement made them more enthusiastic about eating them. They were so much nicer than shop bought although they looked a little amateur. I'm not about to win Masterchef but I try.

I wasn't brave enough to make the mayonnaise though. I will next time.

Would it be safe to freeze the fishcakes? Would you do it before or after cooking?

This was the best tasting challenge yet!

Dd 9 helped me make them as ds had better things to do, she chopped and mixed and pretty much everything for the fishcakes except cook them, she chopped the ingrediants for the mayo and i mixed it, the mayo was lovely but as i didnt trust myself having never made it before i did have a jar on standby.

Dd says she loved making them and asked if we could make them again, both ds and dd ate all their fishcakes and bits left were gladly eaten by the cats!

This was the easiest and tastiest dish so far, we will be making them again.

Thanks for being picked to do this product test, although i havent learned anything new about potatoes i have certainaly learned new recipies.

coming back to add that my children (7&9) enjoyed helping out with this so much that we now have a night aa week they are going to cook! Home made chicken kebabs (marinated and everything!) this week!

My DD (9) already loves helping in the kitchen so this was a lovely opportunity to see if she can make this with as little help as possible. She chopped and mixed the ingredients very well and thoroughly enjoyed herself. Even better was the shaping of the patties and getting messy Grin

I did help with the cooking and sadly both DCs were not keen on the taste of the fishcake. They looked nice and very very appetising but we do not eat much fish so would not make them again according to the recipe.
However if I substitute cooked chicken for the fish next time I am certain they will enjoy them much more Smile

Personally for myself and DH - I would add some chilli to spice them up a bit!

Will try them this week. My 5 year old loves fishcakes so I'm sure he'd enjoy making these, I might even work out the WW points in them for you Wink

The MN recipe file could really do with a 'print recipe' option though....

I'm not a Potato Councillor but my DD loves to cook and so we gave these a go. She is 13 and confident in the kitchen. She was able to make them entirely herself, I was just present to make sure she didn't burn the kitchen down!! She was very pleased that she could follow the whole recipe herself including the mayo.

A thumbs up from this house and the whole family enjoyed the meal. I even convinced DS11 to do the washing up :o

Going to make them this afternoon with the DC.

I've worked out the fishcakes are about 10pp each which is quite a lot. The mayo is another 15pp per portion on top!! Shock So that's 25pp just for this meal and I only get 26 per day!!

Admittedly, I'm on a diet but that's still quite calorie heavy for anyone.

Well, we made them for dinner and I have to say, they were yummy. Even Dh really liked them and he's usually not very keen on Salmon so that's a major win.

My DC are only 5 and 2 so I did all of the prep myself and just got them involved to put the cakes together. The recipe was easy to follow and we soon had our fish cakes made up.

Disappointingly, they fell apart completely when I fried them so we mostly ended up with a pile of potato-y fish rather than cakes.

We didn't make the mayo in the end. I didn't have any basil and it was just too calorific for me to contemplate so we had them with a blob of light Hellmanns instead which was definitely needed to cut through the lemon in the fishcakes. We also had Broccoli as well as watercress as the children were more likely to eat the Broccoli.

All in all they were a success. We enjoyed making them and we enjoyed eating them, even in their fallen apart state. I think next time I might cut down on the lemon a bit and add some more side veg but anything that gets DH to happily eat Salmon - which is DS's favourite - will definitely get made again.

We enjoyed this one! Ds couldn't be persuaded to help, but dd did, and was very keen on all the mashing, chopping and shaping.
We made the fishcakes with both normal and smoked salmon - we liked the smoked salmon best. They were quite easy to make, although a little fiddly, and I'm not sure if I'd attempt them in a hurry on a weekday when I have far too many small people getting underfoot. However, I froze some of them, and they froze very well.
I tried frying them to start with, and it was an unmitigated disaster. Not quite sure why, but my fishcakes fell apart, stuck to the pan and generally burnt. then the kids refused to eat any of the brown bits. The next lot I tried baking in the oven and that was much more successful. I just brushed them with a bit of oil and cooked them til they seemed done - not quite as browned off, but my family preferred them that way.

And, and, FINALLY! a recipe that my dd actually likes! She's tried all of them so far, but still wasn't very keen on potatoes. This one she really liked, and even had seconds! DH didn't like them though. Just when I thought Id' found a meal that everyone would eat. Humph.

We'll definitely make these again, but I think they might be something I batch cook and then freeze, because they're practically an entire meal in themselves. (We liked them with peas, I had them with salad, the mayo was quite nice, but we could take it or leave it). As a cm, it's really useful to have something in the freezer that is in individual sizes for the nights when I have to feed some children earlier than others (or when the main meal just doesn't cook fast enough to give the the mindees before they get collected!).

Anyway, I've rambled a bit. In summary, the fishcakes were quite easy to make and have potential for batch cooking. All the children enjoyed them, and would like to have them again. We didn't vary the recipe but may well try out variations in future.
DD's feedback - she enjoyed shaping the cakes best, preferred the smoked salmon ones to the plain salmon ones, and would very much like them again.

This has been our favourite recipe out of all of them.
Thank you for all the different recipes and letting me be a potato councillor - we've tried out lots of different things and have added some of them to our regular menus. We'll be quite sad not to have new recipes coming through the post every month - maybe I'll even have to start checking out the recipes section on here!

I made these today - having intended making them earlier in the week with ds1, first ds2 was ill and then ds1 was so it ended up later than anticipated and just me making them (DS1-6 was disappointed not to be up to making them today so have promised that we will try them again so he can do lots of helping). Have put some pictures of their making and the finished result on my profile...


Was a bit Hmm about the amount of potato in the fishcakes - turned out to be just one large-ish jacket potato size that my dh would have eaten 2 of for a meal by himself so was intrigued to see how it would stretch to 4 people.

There were a couple of things in the recipe that were a bit contradictory - for example it said it only took half an hour to do everything - but it then told you to refrigerate the mayo for at least 30 mins - and that's having put the potatoes on to boil and made the mayo too. Which makes the whole thing more than a 30 min recipe. And the printed version had 40g/ 3/4oz butter which is wrong (40g is closer to 1.4oz according to google). My printed version is downstairs and I'm too lazy to get it now I'm just checking against the online version which doesn't have the oz measurements in so I don't know if any of the others were wrong. Plus the mayo recipe said to use 'green onions' - I'm usually pretty good on veg but haven't ever come across green onions before. I just used a spring onion - which looking at the online recipe now I see they say to use the same thing - but it confused me a bit as spring onions had already been referred to as spring onions in the fishcake bit of the recipe which is what made me wonder if it was something different.

As it was for such a relatively small amount of potato that needed to be quite dry and I was going to use one large one anyway, rather than boil and mash it, I just microwaved it as a jacket potato and then pulled the skin off and mashed the insides which speeded things up a bit and also meant I didn't need to heat it again to drive off any excess moisture.

As some of the other reviews had said they could be excessively lemon-y I didn't worry about putting in every last scrap of lemon zest and juice - they ended up pleasantly lemony rather than overly so.

For the salmon I just used two fillets that were in a pack in the supermarket (300g) as this is all they had in. And tbh, the worst thing about the recipe was having to chop the fish - I don't really like fish at the best of times; I usually just manage to get it from the wrapping to the cooking dish without the need to touch it but this needed the skin taking off and lots of touching to chop it [euuww yukky smiley]. Bits ended up smaller than 1cm sq but worked well in the fishcake - not sure how well it would have all held together if they were much bigger. And how do you get the stinky fish smell off your hands properly?

I used a mix of butter and nice local rapeseed oil to fry them in rather than olive oil - we prefer the flavour.

They just fitted into my frying pan but I wasn't really sure about how thick they needed to be - which I am guessing is the thing that dictates how quickly they cook rather than diameter, so it would have been nice to have been told that (you've probably guessed by now that I am not a fish person and have never made fishcakes before - and they're certainly something I have never eaten through choice before so I'm not really that used to how they should look or be sized!). I would have been hacked off if I had had to fry them in two batches if they were a meal for a family - would have lengthened the time to table again.

Would have loved to have made mayo but was running late and tired (and dh is very health/fat aware so said up front he didn't want any due to the amount of oil in it) so used Hellmans - added lemon, basil and spring onions which made it nice. Think I could have added more of all of it and maybe a spoonful of yoghurt or cream if I'd had it to make it even nicer but it was fine.

I couldn't get hold of any watercress - so I did a simple tossed salad which worked really well plus was a bit more substantial than just watercress when having it as a main meal. I used a dressing that sounds really strange but actually works really well on the salad and in combination with the fishcakes to give it a bit of a different kick. Used a good teaspoon of barts coriander in a jar, a good squirt of thai sweet chilli sauce (1 dsp approx), a good squirt of balsamic vinegar (actually the merchant gourmet balsamic glaze which is thicker and sweeter than normal vinegar but very yummy) and mixed it all with rapeseed oil into french dressing consistency, then mixed in lettuce, cucumber and tomato with a sprinkle of salt (personally hate pepper and only use a very limited amount of salt - this is one of the few things I put it into).


Overall this was definitely my least favourite recipe - just because I hate fish so you were on to a non-starter from the beginning. I do try to eat salmon once every week or two to try to be healthy so at least you chose the one fish I do eat. I don't think there would have been enough here for four people - I couldn't persuade either ds to try the fishcakes (their being ill probably didn't help but they are not great fish lovers either). DH and I shared them between us - and he had a couple of small jacket potatoes too as he was hungry. If I was having salmon normally I'd have a fillet and a few new little new potatoes, he would have lots more potatoes than me so I don't think that we were being particularly excessive by sharing them between us!

DH was pleasantly surprised by them - he wasn't really looking forward to them (he also isn't a great fish lover) - but not enough so that he would want me to actively go out of my way to make them again unlike lots of the others. He also thought they would be better with more potato in (especially as this was a recipe from the manyfacesofpotatoes) - particularly if you want to stretch the salmon between 4 people!


Can I just say thank you so much for choosing me to be a Potato Councillor - I've had lots of fun making the recipes and discovering new things to do with potatoes over the last few months and DH (who is a real potato lover) has certainly enjoyed trying everything even if it has been a bit of an uphill struggle to persuade the dc. It's also been a good challenge personally to start to use a few recipes again (I've got stuck in a rut repeating favourites and when I do experiment it tends to be variants of familiar things, plus I tend to be a bit of a 'pinch of this, dash of that' cook rather than a strict recipe follower so it is nice to be reminded to try them. I've also enjoyed trying to take pictures of it as I've gone along (not strictly part of it I know!) and I have no idea if anyone will have looked at them but again it's added a different dimension and made me think more about doing the recipes and their presentation as well as the end taste.
