Super Easy Paleo Recipes

I'm new to paleo (4 weeks in, 10lbs lost) but although I'm really enjoying it and feeling great on it I'm already in a bit of a rut foodwise. Like a lot of people on here I'm very busy juggling a busy job and a hectic family life so I don't want anything that takes too long or is overly complicated or has exotic ingredients (I live in the sticks and the local shops aren't overly well stocked). It's only me on the diet, not the whole family if that makes a difference.

So far my favourites have been:
Breakfast: either leftovers and a piece of fruit or scrambled fruit (basically a failed pancake recipe - I beat an egg and mix it with either half a can of fruit (pears are my favourite) or a banana and then cook in the same way as scrambled eggs. Sounds disgusting but is actually quite yummy)

Lunch: various salads with either tuna, boiled eggs or cold leftovers

Tea: homemade beefburgers (mince mixed with finely chopped onion)
Bolognese (brown the mince then add a can of tomatoes and assorted chopped veg - normally onion, carrot and mushroom). I've served this with the fake courgette spaghetti which worked well.
Other than that I've stuck to various combinations of chicken legs, pork chops and platefuls of every veg known to man.

Does anyone else have any super easy paleo recipes to share?

Not very seasonal, but slow cooker stew is a favourite chez Elephants. Stewing beef/casserole steak/shin/whatever, onions, carrot, celery (butternut squash optional if not too bothered about carbs), tin of tomatoes, herbs, whatever, chuck it all in the pot in the morning, stick it on low, come home to dinner!
We have that with baby spinach/steamed broccoli.
If you are feeling too busy for all the chopping/peeling then most supermarkets do pre-chopped frozen casserole veg. Sainsbos do a pre-chopped mixture of finely chopped carrots/onions/celery which was my bolognese saviour with a velcro baby.
Your breakfast sounds great. I do a lot of tortilla/frittata/egg muffins. Saute bacon, chopped courgettes/leeks/peppers whatever, mix up with LOTS of eggs and either cook in a frying pan and finish under the grill or in the oven, either in a big dish or in silicone muffin tins. (we call it egg cake around here).
Um, otherwise we eat lots of curry (coconut oil instead of butter/coconut milk instead of yogurt), stir-frys (just with extra veg instead of noodles) etc. Lot of salmon/mackerel & random veg too. Ratatouille is good if you make a massive pot at the weekend & reheat when you need veg through the week.
(sorry that was a bit of an essay)

Thanks Ele, I'll give those a try. Anything for a bit of variety. Tried sweet potato chips with my homemade burger for tea and they were lovely. I can tell because I had to fend off the kids as they were stealing them when I wasn't looking!

Have you added any more great recipes to your list?

Only just started this way of eating too and trying to be innovative

This week we've had a vegetable casserole I made on Sunday (so all veg I had in carrot, onion, leek, sweet potatoe, peppers, tin toms, garlic and fresh herbs) with a piece of cod. Was expecting it to be shit and both dp and I liked it. Very different to our normal meals, served with salad too so filling.

Tonight stir fry with chicken and I've dipped the chicken in egg and had lots of vegetables. Used lemon, honey, ginger to add some taste and again, DP impressed.

Might do burgers tomorrow night. I'm missing sauces the most, like mayonnaise, what do people do? I had a bit of cold casserole purée tonight and it was nicer than I thought, like tomato sauce!

I made a chicken satay stir fry tonight which was delish. I posted the link to the recipe I used as a basis on the paleo for weight loss thread. Instead of making kebabs I marinaded then stir fried the chicken, took it out of the wok and stir fried the veg, then put chicken back and tossed together. Served with the sauce.

Also, you can make your own mayo, it's only eggs and oil.
