Struggling with Paleo diet

I am hideously overweight and have been following the paleo diet for about 8 weeks, I have lost just under 2 stone with another 6 to go
I am really really struggling to eat a varied diet, evening meals are not as difficult to plan as we have just been having either chicken,pork or steak with roasted vegetables but breakfast and lunch are proving really difficult so I haven't really been bothering to eat then which is not healthy I know.
I haven't been buying any of the crap that I used to binge on and feel absolutely fantastic in terms of my energy levels and mental health.
Can anyone give me any suggestions for meals that are relatively easy to prepare that are paleo friendly please?

Banana omelette for brekkie? Look on Pinterest for paleo ideas, there are loads of different and exciting recipes

That is an impressive weight loss, congratulations!:)

I think most of us have felt stuck on ideas at the beginning.
The most difficult part of becoming paleo/primal is to escape the mindset of set meals. I can't imagine Paleo man thinking in terms of breakfast, lunch and dinner, (s)he would have thought in terms of food. (S)he would have have eaten anything leftover from the day before or gone 'out' to forage and hunt. Personally I love eating leftovers or salads for breakfast and/or lunch. You can often make salads exciting and unique by adding things that already in your garden: at this time of the year aquilegias are lovely to look at but also yummy- their leaves taste similar to sugar snap peas and their flowers are either 'nectary' or 'citrusy'. Roasted vegetables last well and are lovely cold too: roasted kale, cauliflower and broccoli are excellent lunch box fillers.
Aubergine slices (grilled or in the oven), ice berg lettuce make great substitutes for bread slices. Swede 'french fries' are great as soldiers for eggs and or dips. There are a lot of great Paleo recipes out there: Nom Nom Paleo ; Paleo cupboard to name a couple of sites.

Hi!

I was at a loss at the beginning too, its so overwhelming!

I find breakfast muffins or omelette muffins are brilliant for breakfast as you can make them in advance, and just grab and go, www.paleoplan.com/2009/12-31/carrot-banana-muffins/ are easy and tasty, and for the omelette just stick some bits of veg and maybe some bacon in the bottom of those silicon cupcake cases and pout in your egg mixture and bake! delicious. Baked eggs are also delicious! Line a cupcake case (i use these a lot!) with sliced ham, stick some chopped up tomato, and spinach (anything you like really) and crack an egg on top and bake! These can be made the night before too!

Sweet potato hash is another good breakfast one, it can be made in bulk at the beginning of the week. ( can you tell i REALLY like breakfast!)

For lunch i tend just to eat the previous evenings left overs ( i make sure i make enough for double portions!) saves having to think of something else to make!

i think i have a weeks meal plan tucked away somewhere if yuo wanted it xxxx

The set meal point is really helpful actually, I hate eating breakfast and really dont enjoy it so knowing that actually I dont have to eat it is fab.
thank you for the web links Favadi I will take a look at them.
Lollipop I would love to see a meal plan if it's not to much hassle.
I think because the paleo diet is so strict it is helpful, I know that I cant just have a couple of biscuits or a packet of crisps which I undoubtably would end up binging on!!
