So, had chicken shawarma with mushroom stirfry last night.

Italian beef stew with gorgonzola, celeriac mash and broccoli tonight.

Bacon, cheeseburgers with celeriac chips tomorrow.

What are you all eating this week? SmileSmile

INGREDIENTS

1 lb boneless skinless chicken breasts (2 large breasts)
1 lb boneless skinless chicken thighs (4 large thighs)
6 tbsp extra virgin olive oil, divided
2 tsp cumin
2 tsp paprika
1 tsp allspice
3/4 tsp turmeric
1/4 tsp garlic powder
1/4 tsp cinnamon
Pinch of cayenne
Salt and black pepper
Nonstick cooking oil spray

In a small bowl, whisk together 1/4 cup olive oil, the spices, 3/4 tsp salt and 1/4 tsp black pepper (if you're salt sensitive, use 1/2 tsp of salt). Pour the spice marinade over the chicken pieces. Stir with a spoon till all the chicken pieces are evenly coated in the marinade. Marinate in fridge overnight.
Preheat oven to 400 degrees F. Line a baking sheet with foil. Spray the foil with nonstick cooking oil. Place the chicken pieces on the sheet, evenly spaced.
Place the chicken in the oven. Let it roast for about 15 minutes till cooked through, turning the chicken pieces once with tongs halfway through cooking.
Take chicken out of the oven and let it cool slightly. Use a sharp knife to slice the meat into small, thin shawarma-like pieces.
Remove the cooked chicken from the skillet. Heat another 1 tbsp of oil and saute the remaining chicken in the same way. Serve warm.

Tomorrow we are having roast leg of pork, cooked in the slow cooker. Hopefully I will be able to take the skin off and make crackling!

Along with that, I'm doing aubergine and courgette in tomato sauce and salad.

Change of plan for dinner.

Got a whole rotisserie chicken from Waitrose £1.20 and a bag of mushroom stirfry for 35p. Delicious! SmileSmile

Tonight I'm having salmon with coriander mayonnaise and spicy veg stir fry

Wednesday- pork shoulders in a mustard cream sauce with steamed veg.

Thursday- Aubergine parmigiana

Friday- goats cheese and asparagus frittata

Saturday- pork terrine with spinach salad

Sunday- not decided yet- maybe a creamy rabbit casserole Smile

Today- king prawns in garlic butter with salad
Wednesday - pot roast pheasant in a cream sauce with steamed veg
Thursday- no bean chilli with cauliflower rice
Friday- bits and dips-smoky Aubergine dip, roasted garlic dip, mackerel pate, nice oil, to put on baby lettuce leaves, posh hams, and veg sticks. I'll be doing some fried chorizo and prawns for warm bits.
Saturday- lasagne made with Aubergine slices( the leek way is too much faff)
Sunday- gammon with a cream based parsley sauce and veg.
