I always seem to return to...

Smoked fish and celeriac remoulade
bacon, stilton and spinach crustless quiche
Roast cauli, halloumi and almond salad
Swede corned beef hash

All very yum but I need more inspiration!

My favourites are chilli con carne without kidney beans, cottage pie made with swede, and Bolognese sauce, with cauliflower or mashed swede.

yes cottage pie, forgot about that. I made it once with pesto and cheese in the swede mash which was tasty.

Stuffed green peppers. Bit heavy on tomatoes, but not too bad carb-wise. Just leave out the rice that most recipes call for.

Salmon plus a pack of seafood, an avocado, green peppers all in a frying pan with fat. Spinach with butter on.

One of those recipes adapted - stirfry ginger pork mince, served on lettuce with stir fry veg. Quick and tasty - plus pork mince is cheap.
