Low-carb diets

Give me some inspiration for low carb salad to take to work please!

I always take a chicken salad to work:

chicken breast
leaves
tomatoes
spring onion
cucumber
caesar salad dressing.


zzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzz

Please inspire me to go shopping for something else!

Bacon and cheese and a nice combination. How about tuna mayo and salad? A boiled egg or two?

Today I have brie bacon and avocado on leaves with a caeser dressing.
Yesterday was prawns in mayo with a little chopped tomato and rocket.
Monday was a trout filet with avocado and rocket with a french dressing.
So happy the weather is improving and can have salad again.
Could also try the following on mixed leaves;
egg mayo
mozzarella basil bit of tomato and avocado
egg and bacon
chicken caeser
make your own chicken satay with no sugar peanut butter ground nut oil soy sauce and chilli flakes.
tuna noisoire (sp?)
Are you in the first few weeks or a bit further along?

Or bacon and egg mayo could be good too couldn't it?

Mumelle, do you chop the avocado at work? I wouldn't really have the opportunity to do that, but I should get some for the weekend!

I'm in the first week (for the umpteenth time Blush )

I am eating baby spinach with sweetfire beetroot, hard boiled egg, cucumber, tomatoes and flaked hot smoked salmon. Would have avocado too but I had some with chilli and tomatoes on toast (I'm not low carb, just don't eat lots) for breakfast.

Big pile of cooked and blanched green beans with roast red onion, blue cheese and walnuts would also be delicious....

I have been having fruit in salads - strawberries and mango are good.

I treat myself to a salad from Chop'd once a week but the other days I try and recreate what they do. They have a massive list of salad ingredients on their site so I just pick a few for each day's meal (obviously depending on what I've got in) it's good for inspiration and mixing things up a bit.

Today I had puy lentils, feta, walnuts, spinach

Tomorrow I'm going to have avocado, beetroot, rocket and grated carrot

Also make a tasty dressing, that will help! I often used to add pine nuts and flakes of Parmesan cheese to salads, made them a bit more interesting.

A lovely homemade coleslaw with red and white cabbage, grated carrots, cashew nuts and bacon pieces with creamy low fat mayo and some chopped chives, yummy!
