No / low carb slow cooker recipes?

I need to lose some weight and had success before with no / low carbs mixed with exercise...

Problem is, I now have a very grumpy baby I can't put down so need to prepare stuff in advance, this is usually achieved with my slow cooker while she naps for 3 and a half minutes but they're all very carby meals...

Any ideas? Grin

Not all slow cooker-able, but lots of 'bung in a dish to marinate for a few hours and cook later' recipes.

Also, the cauliflower cheese is to die for, and if you don't have the time to make the cheese sauce; Seriously Strong also make a ready made cheese sauce which is 1.2g of carbs per 100g, which you can just pour over broccoli/cauliflower, put on some grated cheese if you're feeling fancy, oven for 30 minutes and voila! Tis lovely.

You can also slow cook an entire chicken (smells a bit odd) and at the end the meat just falls away so you can box it up for salads and snacks during the week.

My most common slow cooker food is a lump of meat thrown in with onions, swedes, herbs and spices. I'm a bit crap at cooking in general, though, but you get amazing pulled pork like that, for example.

I actually found a surprising amount of low carb slow cooker recipes on Pinterest of all places, so maybe worth having a look. Always worth searching for as crock pot recipes, too.

I cook loads of low carb stuff in the slow cooker: whole chicken, lamb rogan josh, gammon, etc.

Easiest is a piece or cubes of meat (Tesco do cheap stewing lamb) and low carb veggies such as swede, celery, shallots, sometimes I add a few carrots or parsnips as my kids will eat those. Add a stock cube and some seasoning and herbs. I like to strain out the fluid and fast boil it on the hob to reduce and thicken it a bit (if needed you can shred the meat while the 'gravy' is boiling) then chuck it all back in for another half hour or hour until we're ready to eat.

Lamb rogan josh: lamb, garlic, ginger, spices or paste, tin of tomatoes, coconut cream, courgette, carrot, mushrooms, shallots all lobbed in. If you grate the carrot then you get a nice thick sauce.
