low-carbing with a toddler

My husband and I have been LCing for about six weeks now and we're really getting on with it. We don't LC our 18m old, she gets wholemeal toast, oats, etc. The problem is dinner - she was a great eater for ages but now with teething and general toddlerness she is becoming a fussy eater. I have the feeling she'd like a good carb-y meal, chicken with rice, mushy mac n cheese etc but this will mean making separate dinners for my husband and I and our daughter.

I suppose, then, that most LCing parents of toddlers also have this problem so just looking for a bit of commiseration! I work crazy hours and have only just managed to fit in cooking LC meals around my work and now thinking about having to make dual meals is giving me the vapours!

Hello,

Do you have space to freeze potins of food? OUr toddler often eats what we are eating, but we have a back up supply of meals in the freezer which we can defrost if needed. Things like macaoni cheese, pest pasta, lasange, spag bol, cauliflower cheese - I make a big pan of it and then freeze in individual toddler sized portions.
Might that be an option for you?

why do you think that your child needs carbs? She really doesn't - plenty of vegetables, some fruit, meat and fats will be positively good for her and could even make her less irritable.

try an avocado dip with carrots, slices of meat, chicken drumsticks - I know kids can be fussy eaters - but resorting to carby foods won't do her or you any favours. just get more inventive. if she is truly hungry she will eat what you give her.

Can't you just give her the same meal as you're having, with a side of mashed potato, pasta, rice etc? Or give her sandwiches/things on toast for lunch and snacks?

All my children (3, 6 and 8) are fussy at dinner time; there are very few meals they will happily eat. No advice but it seems like children eat well at different times of the day so changing the food might not help much? Evening is notorious for toddler grizzleyness.
