At the end of the last BC some of us were discussing what things might have helped us at the start of our LCing adventure. Most of us agreed that photos of what other BCers were eating would have been useful and given us inspiration for different things to cook.

So I am going to start it off by posting my lunch, I had pork and mushrooms in a sour cream and paprika sauce with purple sprouting broccoli on the side. It was delicious Grin

Loving the idea . Not going to post a pic of my 3 sticks of celery with Philly and marmite lunch ...... But will remember to take some photos tomorrow .

Early family supper with DH & DCx3 . Courgetti , low carb sausages with smidge if chopped banana shallot and lowest carb tinned toms I could find .

I am just going to post mu lunch even though its very boring and I am sure you all know what smoked salmon, peppers and cucumber look like Grin

Was 100g of pepper so that's 4.7g of carbs on the spreadsheet counter, I just had eggs for breakfast so think that carb level is ok.

Cauliflower pizza for dinner so I will post a photo of that tonight.

Dinner was cauliflower pizza with pepperoni, this is the third one I've attempted and it was the best. I could slice it and pick it up easily. OH made himself a pizza as well so since its normally me that does the cooking this WOE eating is helping with that! I say "I'm having [insert LC food here] do you want it?" if the answer is no he makes something else.

Mmmmm can we turn this thread into the basis for the low-carb restaurant menu please? Delicious looking food (and quality crockery) both of you.

Sayra before I compliment your pizza Grin - WHAT a tiny lunch! How is that enough to sustain you?

Amazing cheffing on the pizza. I don't think I could achieve that.

I think you should post these pictures on the bootcamp thread. OR post a link to this thread on the bootcamp thread.

How did you manage to get the base solid enough to pick up? I haven't managed this yet!

biwi I made the base the usual way but after cooking the base by itself I turned it upside down. Put toppings on bottom and cooked again then let it cool slightly before slicing.

So how long did you cook the base for? And did you wring the cauliflower out after you'd blitzed it?

Sorry, after stamping my feet I buggered off to bed.

Don't really know how long I cooked it for, maybe 15 mins at 180. Yeah blitzed and seriously wrung out then cheese, herbs and one egg mixed in before shaping.

Woohoo it worked.

Pastryless quiche with salmon, broccoli and asparagus and cumin - ok but not as nice as when I make it with lardons and mushrooms.

One of these makes enough to take to work for a late breakfast/mid morning snack

Yummy notso I might try the crustless quiche, is the recipe on the recipe thread or do you have a recipe?

cauli-pizza

Chop whole head of cauliflower
Blitz in blitzer
Microwave for 3 minutes (don't add anything)
Wring out as much as possible in clean tea towel, be careful, its fucking very hot Smile
Put back in bowl
Add 1 egg, some grated cheese, herbs and mix thoroughly
Shape on baking tray (with grease proof paper) I just use my hands
Cook in oven (180 ish) until top golden brown (12 minutes?)
Put another sheet of grease proof paper on top, turn over, top with whatever you are having
Back in oven for 5-10 minutes until topping cooked
Leave to cool very slightly
Slice and eat Grin

Its an adaption of the muffin recipe from the IPD cookbook

10 eggs
100ml double cream
100ml water
S & P
all whisked together

usually I'll fry a pack of lardons, some finely chopped mushrooms, half a pepper and chuck in some herbs - lately I've been using easy mediterranean herbs.

Put lardons etc in the dish add half a ball of chopped mozarella (optional but nice when you warm slices in the microwave) pour on the eggy mixture, chuck in a handful of grated cheese (as much as you fancy). Bake at 200 til its set and brown (about 25 mins but I never time things)

I fancied a change this week and used a salmon fillet, leek and asparagus but I think it needs a stronger cheese as its a bit bland.

I slice it up and usually get 5-6 days out of my redundant 8" lasagne dish.

Llast night's slow cooked pork shoulder with paprika, chilli and passata - tasted like posh chilli con carne - served with leftover CCC - crabby's cauli cheese.

I love paprika, I nearly did chicken with paprika tonight then remembered I'd had paprika pork stuff twice and mushroom paprika twice this week!!

Tonights dinner was chicken breast with pesto (1.2g carbs/100g) and cheese with broccoli and cauliflower on side with large amount of butter Grin
