Insurance - how much do you really need?

Have been trying to revamp insurance situation since buying a new house. We know we need to cover our residential property and have life policies for this. Critical illness cover is quite expensive at the moment and have enough to cover dh, the main breadwinner.
We've also given thought to whether we should cover an investment property for death just so that the survivor and kids would benefit from rental income on that property.
Realise you could go on on, so what do we really need?

Are you applying for a mortgage when you bought your new house?
