Monster butternut squashes but they're still green

Will they ever go yellow?

They are massive. At least double the size of the average big butternut squash you get in the supermarkets. Why are they still green? Can I harvest them or will they taste horrible? They are already enormous - one of them is 16 inches long (yes I measured it! Grin)

What variety are they? (Just wondering if they might be a green variety Grin ) In any event, under-ripe squash taste perfectly good - but they won't store so well.
