Boston Baked Beans.

12oz haricot beans
1 lge onion
1 tablespoon oil
i teaspoon dry mustard
2 teaspoons black treacle
1/4 pint tomato juice (or liquid from tin of toms)
2 tablespoons tomato puree
2 teaspoons brown sugar
1/2 pint unsalted stock

Serves 4

Soak, drain and rinse beans then cook in fresh water til they're almost tender, and drain again.
Set Oven 140'C (mark1). Peel and slice the onion. Heat the oil in ovenproof casserole and fry onion for about 5 minutes, then add the rest of ingreds and bring to boil. Cover and put in oven. Cook for FOUR HOURS stirring occassionally.

Or non-veggie alternative (how sad am I?)...

Campfire Bean Pot.
1lb Haricot beans
1pz soft brown sug
1/4 teaspoon cinnamon
2 teaspoons mustard powder
4 tablespoons molasses (or treacle)
1 large onion, chopped
1 sprig thyme
1 bay leaf
2 whole cloves
12oz piece rindless streaky bacon
2-3 fl oz dark rum (optional but fabulous!)
salt and pepper

  1. Drain and rinse beans and put in casserole. In a small bowl mix the sugar, cinnamon & molasses then add to beans.
  2. Pour water over to cover (about 1 pint), cover dish with tight fitting lid and put in oven at 150'C (gas 2) for 3-4 hours. Check occassionally and add water if nec.
  3. Stir in rum, adjust seasoning. Remove the backon, slice it, place slices on top of casserole. Return to over and cook uncovered for 20-30 mins.

Problem with tinned ones, Monkey, is they'll be too soft and might just collapse when being baked for four hours.

I've been inspired to make these for the first time in years. I've cooked the beans this morning and am planning coolest ever beans on toast for dinner.

Will let you know.

I'm not attempting to avoid additives HMC, (though it's a desirable bi-product) but am seeking the best possible flavour. L LOVE food.
