Salad recipes needed

I'm having a family gathering on Saturday and want to do a cold meat buffet for luch and BBQ in the evening (weather permitting). Has anyone got any good salad recipes - I'm going to do potato salad, mixed leaf, tomatoes, couscous but need a recipe for a pasta and/or rice salad - has anyone got any good ones (ideally that can be prepared the night before!)

I also need suggestions about what to feed them the night before (8 adults) - bearing in mind that I will be running around like crazy on Friday, sorting out last minute stuff, it needs to be fairly quick to prepare (hopefully I can delegate this to my sis or MIL!)

i made this a couple of weekends ago for our housewarming bbq, but letf it in a bowl and let them help themselves.
it went down really well....
and most of it can be done nite before, oh and i used spring onions instead of celery as i dont like it....

This rice salad recipe includes peas, chicken,
celery, mayonnaise, and tomatoes.


INGREDIENTS:

1 cup long-grain rice
10 oz pkg tiny green peas
1 cup diced (3/4 inch) chicken
1/4 cup diced (3/4 inch) celery
1/3 cup mayonnaise
salt, to taste
pepper, to taste
romaine lettuce or salad greens
sliced tomatoes
PREPARATION:

Cook rice according to package directions and cool completely.
Cook peas according to package directions; drain and cool completely.
In a large bowl toss together 3 cups of the cooked rice, the cooked peas,
chicken, celery, mayonnaise, and salt and pepper, to taste.
Serve on salad greens or a bed or romaine lettuce,
and garnish with sliced tomatoes.
Makes 6 servings.

Not a pasta recipe but this ones always nice:

spinach leaves
cherry tomatoes
tuna
juice off half of lemon and shredded basil leaves.

Mix all together and have a quick complete meal in one

Really easy pasta recipe:

Cook pasta, drain and allow to cool till just warm. Mix pesto and mayonnaise together (you can also add sour cream or creme fraiche if its in the fridge). Add to pasta, mix it all in and chill. Garnish with chopped fresh herbs if you have it. Everyone always loves it and always ask for the recipe!

stuffed tomatoes (makes 8)

4 beefsteak toms
300g/10.5 oz cooked rice
8 spring onions
3 tbsp chopped fresh mint
2 tbsp chopped freah parsley
3 tbsp pine nuts
3 tbsp raisins
2 tsp olive oil
salt & pepper

cut toms in half then scoop out. stand them upside down for a bit to let juices drain out. turn right way up & sprinkle the insides with salt & pepper. mix together the rice, onions, mint, parsley, nuts and raisins and scoop into the toms. drizzle over a little oil then bar-be-que for 10 mins.

I would add celery seed to mine and grated carrots and wouldn't call it WHITE TRASH! (And I am an AMERICAN).

Pasta with basil vinaigrette (serves 4)

225g/8oz pasta, 4 tomatoes, 50g black olives, 25g sun dried toms, 2 tbsp pine nuts, 2 tbsp grated parmesan cheese, fresh basil. 4

Vinaigrette
15g basil leaves, 1 garlic clove, 2 tbsp grated parmesan, tbsp extra virgin olive oil, 2 tbsp lemon juice, salt pepper.

cook pasta and drain. Put in a bowl.

to make the vinaigrette, place the basil leaves, garlic, cheese, oil and lemon juice in a food processor. season with salt/pepper to taste. process until all leaves are well chopped and combined. Pour over the pasta and toss to coat.

cut tomatoes into wedges. pit and half the olives and slice the sun dried toms. toast the pine nuts on abaking tray under grill until broen. add all those (except nuts) to the pasta and mix well.

sprinkle nuts and grated cheese over the top and serve.

Oooh yes the pasta with the avocado and mozzarella recipe please!

oh and the goats cheese one too, is it still ok if I leave the walnuts out as I don't like nuts? or does it lose something major? Ta v much

pasta avocado etc etc. (serves 4)

2 tbsp pine nuts, 175g/6oz dried pasta, 1 tbsp olive oil, 6 tomatoes, 225g mozzerella, 1 large avocado, 2 tbsp lemon juice, 3 tbsp chopped fresh basil, salt & pepper

dressing: 6 tbsp extra virgin olive oil, 2 tbsp white wine vinegar, 1 tsp wholegrain mustard, pinch of sugar.

toast the pine nuts and leave to cool.
cook pasta and drain. allow to cool.

thinly slice the tomatoes & mozzerella

cut avocado in half and romove the stone and skin. cut into thin slices and sprinklw with lemon juice to prevent discolouration,.

to make dressing beat all ingredients together and season to taste with salt & pepper

arrange the tomatoes, avocado and mozzerella slices on a large platter around the edges.

toss the pasta in half the the dressing and place in the middle of the platter. drizzle remaining dressing over. dress with pne nuts and basil leaves

Mango & wild rice salad (serves 6)

75g wild rice, 150 basmati rice, 3 tbsp hazelnut oil, 1 tbsp sherry vinegar, 1 ripe mango, 3 sticks celery, 75g ready to eat dried apricots, chopped, 75g flaked toasted almonds, 2 tbsp chopped freh coriander or mint, salt & pepper.

cook the rice in seperate saucepans as wild rice takes longer than basmati. Drain and rinse wll then drain again. Place both in a large bowl.

mix the oil, vinegar and seasoning together. pour over the rice & toss.

cut the mango in half lengthwise. remove & discard the stone.

peel the skin from the mango and cut the flesh into slices.

slice the celery thinly & add to the cooled rice with the mango, apricots, almonds and copped herbs. Toss together and transfer to a serving dish.

fry lardons (bacon bits) in lots of olive oil, whilst frying slice a log of goats cheese into quarters and chop into pieces. Put cheese onto salad, when bacon crispy pour over salad including hot oil. Toss with balsalmic vinegar. Cheese melts a bit , Yummy!!!!!!!!!!!
