Thomcat - Lamb & Sweet Potato Stew Recipe Please

Thomcat, you mentioned the above recipe on a thread not so long ago. I wonder whether you would tell me how to make it. Thanks

Do you know what I've gone through my books and I can find something I made for lottie which was braised beef with sweet potato but can't think why I would have mentioned it cos I made it ages ago so I'm not sure it's the one. I can't think what it was. I'll try and do a shearch and see what I was on about and it might jog a memory.

Right I can see where I said lamb stew and i know what I mean now, you can use lamb or beef, here you go:

1 leek, wash and slice
20g butter
100g braising steak or lamb cut into cubes
2 tbsp flour
275g sweet potato, peel & chopped
300 ml stock
juice of 1 orange

Casserole dish

Soften leek in butter
roll meat in flour
Add meat to leek and brown
Add sweet potato stock & orange juice
Bring to boil
Cover and transfere to oven at 180C for 1 1/4 hours.
Blend to desired consistency.

I used to love doing one for mummy for for lottie with this dish!

Thomcat, thank you for taking the time to do this. I will try the recipe tomorrow and tell you how it goes. We love sweet potato and with the orange juice I am sure it tastes really lovely. Thank you again.
