Chicken mince...what can i make with it???

Hi all you wise cooks out there just wondering if anyone has a yummy recipe for chicken mince.
I found it in my freezer i must have bought it by mistake now iam wondering what i can make that will also be attractive to my ds.

Not sure how old he is but how about these using the mince instead of chicken breast (it gets processed anyway).

You could make rissoles or burgers out of it. You could make a sauce for lasagne or other pasta. You could cook it with gravy and veg and put it in a pie.

Got this one from someone on Mumsnet ages ago - my kids love it


Annabel Karmel's chicken and apple balls


3 chicken breasts or 6 thighs
1 apple
1 tablespoon of lemon juice
pinch herbs
half onion chopped finely
1 stock cube (I use a teaspoon of stock powder)
2 tablespoons fresh breadcrumbs
flour
oil

mince chicken in food processor, grate apple, add lemon juice to apple, mix together chicken, apple, herbs, onion, stock powder, breadcrumbs

flour hands and shape into 10 gol fball sized balls.

Shallow fry in oil until golden for about 6 mins.

(Also works if you bake them in the oven about 10 -15mins at 180 deg)

Girls i made the chicken and apple balls but slightly change it made them into patties and crumbed them in cornflake crumbs and parmasan cheese and baked them in the oven.....yummmmm big hit with dh and ds. Thanks for that girls.
