Mussamen Curry

Sorry, spelling is probably wrong..my local Chinese supermarket has stopped selling the paste to make this. Does anyone know the spices to make my own version? I am veggie but am prepared to exclude shrimp paste if absolutely necessary.

Never heard of this (surely a corruption of 'musulman' ie muslim) Are you sure it's not a brand name for a sauce. You should be able to have a good guess at what's in it surely?

My Thai recipe book has Musaman Curry Paste -

1 tbsp coriander seeds
1 tbsp cumin seeds
seeds from 4 cardamom pods
2 tsp black peppercorns
1 tbsp shrimp paste
1 tsp nutmeg
1/2 tsp ground cloves
15 dried red chillies
1/2 cup chopped shallots
2 stems lemon grass (white part)
6 cloves garlic, chopped
1 tbsp oil

Dry-fry coriander, cumin and cardamom for 3 minutes
Grind spices and peppercorns
Stick everything in a blender and blend till you get a paste

Makes about 1 cup

Phew. I'd look for an internet company that will deliver packets of paste, myself... Smile

Not a brand name, a type of curry that I always get when out at my local Thai..I used to be able to buy the paste in London chinatown (but it disappeared) but not v cleverly never looked at what was in it. i was hoping that Suzywong with her fantastic recipes would know how to make the paste properly. (sucks up bigly)

That's intersting fruitful (feel jealous now, as I fancy myself as a bit of a dab hand in the kitchen, esp. with Thai food... Envy
