potato daupinose (sp?) please.....

can someone please tell me how to make a beautiful potato dauphinose?

Yes I can (god how I love that dish)

I think for the exact quantities you should look on deliaonline or google it, I never use exact measurements but this is the way I do it;

Choose waxy red skinned potatoes like desiree
Peel them and slice as thinly as you can (a mandolin is best for this) and put them in a bowl of cold water to take out some of the starch
Generously butter a gratin dish, and then cut a clove of garlic in half and rub this over the buttered dis.
Layer the drained potatoe slices over the bottom of the dish; potato, a little salt and white pepper and nutmeg and dots of butter
Pour over a blend of water and double cream and bake in a hot oven uncovered for about 30 minutes and then put foil over it for the last 15 so that's about 45 in total

Take it in to the garden and eat it all yourself.

dh makes it with similar ingredients to suzywong but with Gruyere cheese added.

1 clove garlic
30g butter
1kg potatoes, peeled and thinly sliced
140ml single cream
salt and pepper
180g Comte or Gruyere cheese, grated
90g butter, cut into small dice

Preheat oven to 200oc/ gas mark 6. Rub bottom of dish with crushed garlic and grease liberally with butter.
Spread half potato slices in bottom, sprinkle with cheese, salt and pepper and dot with butter dice. Top with remaining potaot slices and sprinkle with remaining cheese, salt, pepper and butter.
Pour cream into side of dish around the potatoes.
Cook in top of oven for 30-40 mins or until potatoes are tender and top is nicely browned.
Serve immediately.

When I was foolish stubborn vegetarian I used to have a whole dish of it for my Xmas dinner

thank you so much suzywong and liz, am making it on saturday night with salmon fillet, baby toms, green beans all cooked with a little oil in the oven. mmmmm
