In my freeze I have....

10 sausages
Pork ribs
Sea bass
2x pork joints
Stewing steak
Frying steak
Lamb chop thing
Chicken breasts
2x medium packets of mince

What can I put on the menu for a family of 4??

This lot needs to last 3 weeks.... I generally shop at morrisons & aldi. We live on a very tight budget & I would need to be able to re-freeze the cooked meals to stretch it all...

No allergies & not fussy eaters....

Please help me with some ideas Smile

Sausage Casserole, bulked out with root veg, as 10 sausages won't stretch to 10 people.
Chicken breasts chopped up and made in to kebabs with onions, peppers, tomatoes etc on the BBQ.
Mince can be stretched out with loads of Pasta in a proper Italian Bolognese (they only coat the pasta with the Bolognese sauce rather than dump a pile on top).
Stewing steak in a casserole, again bulked out with root veg.
Pork joints could be roasted and then sliced for cold, with salad.
Sea Bass, again could be mixed in a white sauce and stirred through pasta.

I like the idea of slice pork with salad. It's normally used for a dinner but the leftover could go with a salad....I really like that idea Smile

As above and chop or slice the sausages, fish, steak and chicken so no one feels they didn't get x amount. Then bulk with veg/ lentils/ pasta/ rice/ potatoes.

Steak works well in a stir fry, as does chicken. Mince can do a Chilli bulked with more beans than mince, grated carrot makes it even more filling. Ditto bolognaise with grated carrot.

Haven't tried it myself but some people add a handful of oats to things like bolognaise, needs water added if you try it.

I don't know if I could make that stretch 3 weeks for 4 people...depends on what other ingredients you have in like veg / rice / pasta / salad etc

3 weeks is 21 dinners:

day 1: sausage casserole with lots of veg cooked into it, small portions
day 2: same - bulk out with baked potato
day 3: pork ribs cooked in bbq sauce with wedges / baked pots & veg
day 4: left over ribs put into lentil soup served with cheese on toast
day 5: sea bass cooked with veg and puy lentils (leftovers - lunch next day
day 6: 1 pork joint very slowly cooked to make pulled pork in buns, coleslaw
day 7: use the leftovers from day 6
day 8: beef stew bulked out with lots of veg and mash
day 9: leftovers from day 8 topped with mash and baked
day 10: frying steak v thinly sliced to make stroganoff (depends quantity)
day 11: rest of frying steak sliced into slivers for stirfry
day 12: lamb chop thing? Roast / fried with veg or if big enough stewed
Greek style with tomatoes and garlic
day 13: possibly lamb leftovers? Depends how big lamb portion is
day 14: chicken breasts made into chicken and veg curry with rice
day 15: left over curry
day 16: mince made into bolognaise with lots of veg in the sauce
day 17: left over bolognaise made into lasagne - garlic bread to bulk
day 18: mince made into cottage pie
day 19: left over cottage pie
day 20: ?
day 21: ?

With a few days of omelettes / pasta pesto / baked potatoes / beans etc you could do it but much will depend on the quantities of each meat you have and your store cupboard. With each of the stew / sauce / dinners I would freeze small portions for any dc so you are guaranteed some good proper dinners for them if things run a bit tight towards the end

Superglue some of these options are fab....pulled pork Smile stroganoff Smile beef stew with mash on top & bake- brilliant....my DH will be very excited by some of these new ideas

pulled pork freezes well....make plenty of sauce, and have it with fajitas

or slice left over roast pork, again, make plenty of gravy, and freeze it together, defrost and reheat gently, serve with freezer veg and giant yorkies....bought or homemade

if you save some bolognaise it is great for making calzones, you'll need pizza dough, but that's not hard to make, and cheese, peppers/onions

also pulled pork works well on pizza too...base, pesto, pulled pork, bits of ham/sausage/cheese

chicken breasts...if they are fat ones cut them in half and then flatten them, cover with mayo and breadcrumbs and fry/oven bake ...Half a chicken breast sounds stungy, but they bash out well and look very big!

not on your freezer list,but maybe in your cupboard...3 tins of beans...kidney/canellini/chickpeas, drained and crushed up, mixed with the insides of two baked sweetpotatoes, plenty of S&P, handful of breadcrumbs and some very finely chopped onion if you like it....let that cool and then shape it into burger patties....that makes eight very very big ones .....I find they hold their shape better if you pat breadcrumbs over them...like a fish cake. And next time I am going to make that into 12, my starving six foot+ teen only managed one bean burger with a roll/onion rings/chips and salad.
