peppers,peppers everywhere!

Have shopped and taken advantage of lidl' s 4 large peppers for 89p forgetting the large bag of greenhouse peppers I was given yesterday. Have made a large batch of pasta sauce and am currently cooking orzo and veg to stuff some for dinner leaving me with half a dozen (+) to use! Any ideas? Preferably something that will keep/freeze? HELP Grin

I would roast them in the oven with some garlic, and then store them in the fridge covered in olive oil. I'm sure they would last a couple of weeks like that and they would be delicious in sandwiches/salads, on top pizza etc.

That's a good idea, I might chuck them in now while my stuffed ones are cooking. Can't believe I bought so many!

You could chop them and freeze them raw then just use them as required in your cooking. Same applies for chillies.

I love peppers and have some roasted ones in the freezer and some raw ones too that I use in stir fries and in pasta. The roasted ones defrost and taste just as good as freshly made.

Right, have roasted some in oil, stuffed some, frozen some raw and have pasta sauce for the five thousand. Does anyone have a lettuce soup recipe? I seem to have also bought three kinds of lettuce Blush
