Freezer friendly cold puddings for big party, oh help!

Hi everyone,

I have to prepare puddings for 50 for the end of August and need some inspiration please. I would like a selection of 4 or so and was thinking of fruit, tart au Citroen and (breaking my self imposed cold rule!) re warmed brownies to be served with cream but got a bit stuck after that. Does anyone have any trusted favourite freezable puddings that aren't too expensive? Pretty please!

Pavlova or individual meringues? You can freeze them in an airtight container although there'd be a bit of last minute assembly on the day. For large parties I've used chilled liquid egg white which seems expensive but is actually less wasteful than using eggs if you use the whole carton.

Make a load of meringues & break them up & fold into whipped cream + a couple of tbs brandy. Very lightly oil a pudding basin & freeze mix in that. When it somes out freezer all you do is dunk it into hot water & invert onto a plate. Put some chopped fruit or a berry compote round it & voila!

If you want quantities I can find them for you.

BBC good food magazine has a fabulous looking berry and frozen yoghurt cake thing on the cover. I am going to try it.

Summer pudding? Bread and a load of mixed berries - whatever is cheap.

Or pavlovas can be made days in advance.

If I was doing desserts for 50 i'd do 3 tortes, 3 raspberry pavlovas and a massive bowl of strawberries. But lemon tortes would be lovely in there too.
