Crispy sweet potato fries

Is the the only way to get crispy sweet potato fries a deep fat fryer, or should I persevere with the current soggy powdery results I'm getting by following the not so great recipes I'm finding online?

Are they really unhealthy if I did deep fry them? Is there any sort of oil I could use to make it healthier?

It's almost impossible to get sweet potato crispy, However if you coat it in olive oil (or other oils I guess),add some seasoning and roast it in the oven it is delicious. It sort of caramelises if you do it long enough, although it probably won't be crispy.

I think there is a white sweet potato that takes to frying a bit better than the usual one. I saw it on a Caribbean cooking program once, but have no idea where you get them from.

Coconut oil would probably be the healthiest as olive oil is not suitable for that kind of cooking. Also, for a great taste, id recommend roasting them in extra virgin coconut oil. If you like a coconut taste it really goes well with the sweet pot. I roast them like pots. They never go mega crispy. My impression is that they are more watery that normal pots.

Try tossing them in olive oil (or your oil of choice) & dusting them with fine cornmeal or polenta before roasting.

They are more watery than normal potatoes, so they need more space. Imagine a small cloud of steam coming off each chip that is steaming the ones next to it.
