Steam the cauliflower until tender, drain and transfer to an ovenproof dish. Then make a white by melting an ounce of butter/margarine, stirring in a heaped tablespoon of flour and gradually whisking in about 1/2 pint of milk over a low heat until you have a smooth sauce. Flavour the sauce with a little mustard, salt and pepper, grate in some good-flavoured cheese and pour over the cauliflower. Sprinkle on a little more cheese, pop under the grill and that's it.

Or cheat.....don't bother making cheese sauce, steam the cauliflower, decant the cooking water into a mug (you only need a ladle or two full for this) tip cauliflower back in hot saucepan, tip in 1/2 pack of Philadelphia, other soft cheese or labneh, a spoonful of English or Dijon mustard, big handful of grated cheese (whatever you have) and a ladleful of cooking water...mix..add more water to make more moist. Tip into ovenproof dish, season, top with breadcrumbs and grated cheese and pop under a grill for 5 minutes...delicious. I'm hungry now but at work :(

Put frozen florets in bowl.
Microwave on high until cooked (about 5 mins for one person portion)
Pour off any water.
Drizzle with cream.
Sprinkle with handful of grated cheddar and little bit of Parmesan.
Put in oven til golden.

I don't bother with regular flour as I always make lumps or it sticks! So I get the milk to a gentle boil, mix a few teaspoons of cornflour with some cold milk to make a runny paste. Add the cold milk/cornflour paste to the hot milk gradually, stirring over the great until it gets to the thickness you want. Make sure it is slightly runny as the cheese will also thcken it. Grate some cheese. Take the milk off the boil or the cheese will turn grainy. Add as much of the grated cheese as you like again stirring it in. Pour over cooked cauli, sprinkle the remaining cheese over the top and that is that. Not had lumpy sauce since I did it this way and because you add the cornflour mix gradually you can control how thick the sauce is

buy cauliflower already prepped in plastic and a packet of sauce.

Stick a few holes in the bag of the cauli and zap in the microwave. Put in an ovenproof dish, pour over sauce, put in oven for 15-20 mins

My dh doesn't like cauliflower, so we don't get to eat cauliflower cheese very often. If you use hot milk for the white sauce then the chance of lumps is much less, also it's very important not to overcook the cauliflower. Breadcrumbs are nice on top for a bit of crunch.
