Need a fool-proof fish risotto recipe that toddlers like!

Anyone care to impart their recipe? My toddler barely eats fish at the mo but loves rice so perhaps if I can hide some salmon in a risotto she'll lap it up! Here's hoping!

My daughter makes salmon risotto for her children aged 9,7,6 and2. She just makes a normal risotto with peas and the scraps of salmon that you can buy for about £1.50 from most supermarkets. Everybody including her husband loves it and I always try and stay for dinner when she makes it.

It's what we're having (including 11 month dd) for dinner tonight.

As toddlers, mine would eat a salmon and spinach risotto, with a dash of cream and lots of parmesan.

Now we tend to have a less creamy/cheesy smoked mackerel and leeks risotto.

Ask at work?
DSIL is a soft hearted veggie, who rescues ex battrey hens. She's never short of people who will buy eggs.

(If you're only baby sitting, you don't want to sell them at the gate as people will keep asking when they've back home)

we used to make a risotto with rice, leek and smoked mackerel. Cannot recall if ds liked it - we left uk nearly 6 years ago - and tbh he liked pretty much everything - but I do remember it was pretty awesome.

You could probably google it or I might be able to drag it out of the deep archives...

This fish o'leekie recipe always went down well with my two, very like phdlife's suggestion, but white fish might be less strongly flavoured than the mackerel. I'd sometimes add peas, sweetcorn, bacon etc but it's perfectly tasty as is

You could try a kedgeree as well. Mine all love that. I'm not sure where our original recipe came from, but most books seems fairly similar.

Another way to get fish in mine is salmon teriyaki with rice. I use the lightly smoked salmon fillets then make the skin very crispy. You can use bought teriyaki sauce or make your own (which we do so it is gluten free)
