Best veggie cookbook

If I was going to buy one vegetarian cookbook, which one should it be? I want one with lots of recipes and plenty of variety.

this Rose Elliot book The complete vegetarian is my favourite, I love this author, the ingredients she uses aren't too fancy and don't cost a bomb! Grin

Another vote for Madhur Jaffrey's World Vegetarian. Hugh Fearnley-Whittingstall's River Cottage Veg Every Day is good, but Jaffrey's has more variety, and more simple every-day type recipes.

I second Rose Elliot - I used to have two of hers that I cooked from when I was vegetarian. Also, Sarah Brown, and Cranks.

I'm not vegetarian but years ago I got the original Cranks cookbook. I make quite a lot from it. The soups are especially wonderful and always turn out perfectly.
