Could anyone please share some inspiration?
I need to prepare a hearty salad for a party for about 30 people. Others are bringing potato and pasta based dishes so I can't use those ingredients.

Any ideas for some tasty salads???

A nice chunky greek salad always goes down well. This is a nice recipe.

Or this one is a bit less cluttered.

mmm yummy, I love a greek salad. I have in mind something more filling though, maybe something nice with chicken/etc? Any more ideas?

Caesar salad? Chicken, bacon, croutons, lettuce, mayo based dressing. Yummy and substantial!

A friend of mine does a great cold pasta salad with feta - pasta, onions, cherry tomatoes, bit of oil/balsamic as a dressing. You could put loads of other veg in that too.

Cannellini beans, tuna, avocado, red onion, lemon zest, parsley, cherry tomatoes, (capers - the kind in vinegar - and pitted olives optional). Dress with olive oil, lemon juice and salt and pepper.

Sachets of ready cooked healthy grains (merchant gourmet), chopped spring onions, mint, feta, cherry tomatoes and pomegranate seeds, again dressing with salt and pepper, lemon juice and olive oil.

Big bowl of roasted veg (peppers, courgette, tomatoes, red onion, sweet potato) with halloumi included in the roasting tin.

If you want something with chicken this is a delicious Asian inspired salad.

Something lentilly? Puy lentils are delicious and filling, and if you cannot be bothered to cook them, come ready-cooked in packets and tins - both v v nice.

Served with roasted red pepper, rocket and feta, or similar with b/nut squash.

Salade Nicoise is very substantial, or Russian salad with grated carrot, beetroot, cabbage, etc etc with smoked trout.

my grandmother used to do a lovely polish salad!

potatoes, apples, onions, gherkins and beans, dressed with oil and lemon juice, salt and pepper, sprinkled with fresh dill and topped with hardboiled egg halves - was delicious!

I agree with Salade Nicoise - nice and fresh. Alternatively, Panzanella which is tomato and bread based, or I make a nice salad with chicken, new potatoes, peppers, olives and toasted seeds with a balsamic vinegar and honey dressing. Think it was a Sainsburys recipe originally.

I would do a couscous salad with roasted veg in, loads of fresh herbs, olives, cherry tomatoes, cubed halloumi, with a tasty vinaigrette of some sort.

Puy lentils, chopped baby plum tomatoes, finely chopped red onion, chopped peppers, lots of fresh coriander, dressed with lemon juice and balsamic glaze.
