Hi

I am looking for inspiration please!! I would like some nutritionally sound meals for my children that only utilise a few non store cupboard (have extensive dry/canned goods) items..we are getting a little fed up with simple dinners such as spag Bol, beans, protein and two veg, pasta with a protein and a cream or tomato sauce and veg, filled pasta, jacket spud...

Inspire me please!!

Kebabs.... Marinade chunks of meat and veg with some oil and flavourings (herbs/spices), thread onto skewers and grill

Frittatas... Combine various vegetables and cooked potato chunks with lots of beaten egg. Finish off under the grill and serve in wedges with salad

"Stuffed Stuff".... Use hollowed-out lightly steamed peppers or large mushrooms with the stalks removed, fill with savoury grains and vegetables, flavour with herbs/spices/cheese and bake until cooked through

Fajitas.... Stir fry meat/veg with spice and serve with tortillas, sour cream, salsa, lettuce etc

I'm pinching some of those ideas Cogito - my DC are also getting a bit tired of spag bol/ chicken stir fry and the other same old same old recipes I make... and I've got some peppers to use up!

corn-pancakes storecupboard pancakes with crispy bacon and grilled tomatoes.

pasta with bacon and peas I use bacon (2 rasher per person) rather then pancetta.

What about egg fried rice or spannish omlette

a few more (some of these are a bit wintry mind you)

  • fry up tomatoes and red pepper (or any veg really, but you need the tomatoes) and stir into cous cous, then serve with fried halloumi or feta


  • Smoked fish + boiled egg + toast or new potatoes (potato salad with smoked fish is also good). Smoked fish not exactly storecupboard but lasts for ages in the fridge


  • Lentil stew with pancetta or sausages (put in whatever veg you have, eg celery carrot mushrooms leeks spinach)


  • Chorizo, chickpea and butterbean stew (with greens and parsley if you have them)


  • Schnitzel (if you can be bothered with all the breadcrumbing!)
