To want delicious straight forward fuss free recipes

Hello,
Perhaps I'm asking too much but can anyone recommend recipe books or recipes that makes tasty (not boring) but straight forward meals, I'm fed up of looking through my cook books for dinner ideas only to be put of by a never ending list of ingredients & complicated ingredients I don't have in my cupboard and sometimes can 't source... There aren't enough hours in the day... And All for 1 meal! I am desperate to get a few simple tasty recipes under my belt that I can do from time to time for my family but don't know where to start! ...please help if you can :-)

A few of our favourites,

enchiladas
fry a finely chopped red onion and pepper in some oil until beginning to soften, add in turkey mince (approximately 100g per person) and cook until done (around 8-10minutes). Add some frozen peas or sweetcorn and cook for 2 minutes more. Spoon in 2 heaped tbsp red pesto and 1tbsp tomato puree. You can add 25g grated cheese if liked here (we don't as DH hates cheese). Spoon into tortillas and roll up. Slice in half and put into baking tin. Top with HM tomato sauce and/or grated cheese. Bake until golden
on top at 180degrees (approx 10-15mins).

meatballs
finely chop 1 onion, grate a peeled apple, crush a clove of garlic, crumble a chicken stock cube and add to a bowl with 500g lean beef mince (or mixture of beef and pork mince) and 2 tbsp tomato puree. Use your fingers to combine ingredients and then roll into small balls. Coat with flour and fry in a large pan until all sides are brown and they are cooked through (approx 15mins). Serve with HM tomato sauce and pasta (in our house it's crusty bread as DH hates pasta).

Smoky sausage cassoulet

Serves 4

6 good quality pork sausages
1 chopped red onion
1 chopped red pepper
400g tin drained cannellini beans
4 rashers of smoky bacon
1 tbps worcester sauce
1 tbsp balsamic vinegar
½ cup chicken stock.
2 tsp paprika
300g passata
sprig of fresh rosemary
2 tbsp olive oil

  1. Preheat the oven to 200 degrees.
  2. Heat 1 tbsp oil in a large pot and fry the sausages until brown on all sides but not cooked

through. Remove them from the pan and cool slightly.
  1. Put the bacon, onions and peppers into the pan and begin to soften. After 3 minutes add the

paprika.
  1. Cut each sausage into quarters and put back into the pan. Add the cannellini beans, worcester

sauce, balsamic vinegar, passata and chicken stock and stir well. Bring to the boil then transfer
to the oven.
  1. Cook for 45 minutes.
  2. Rub the rosemary with the remaining oil and add ontop of the cassoulet 10 minutes before

cooking finishes.
  1. Serve with salad and ciabatta bread.

Wow thanks so much for taking the time sharond101, I'm doing the meatballs tomorrow ... Mincemeat currently defrosting. Let you know how it goes.

Fry an onion. Add whatever meat you have/like. Then add some chopped veg.

From there, add spices. Either Italian [basil, oregano, parsley], Indian [coriander, cumin, garam masala, turmeric], Mexican [chilli, cumin], or any other herb/spice mix [eg just parsley and thyme will keep it neutral and non spicy].

Then add some tinned tomatoes and cook down. Maybe add a stock cube if needed. Meanwhile cook either pasta or rice or potatoes.

Season with salt and pepper, and serve together on a plate.
