Nice vegetarian dish for house guests

My dsis is coming home from America for a visit and in the years since I have seen her last, she and her daughter have become vegetarians. They'll be staying with me for a few days so a few recipes that would be easy to make would be great.

Look online at the BBC good food website search vegetarian meals .. They have some lovely ones especially with pasta .

Cheesy Baked tortillas. They freeze well if there are leftovers.

When I have veggie friends visiting I've tried these:

  • spinach & ricotta pancakes
  • garlic-stuffed backed potatoes & salads
  • vegetable kebabs with rice
  • stuffed peppers, cous cous & salads
  • butternut squash soup & crusty rolls
  • pasta/pesto combinations.
  • pasta & veg bakes

Does she like curry? We have better Indian food than America, so might be nice to do something 'typically British' ? Grin

Lovely lovely bahjis [sp?) bought in, plus a nice dahl, veggie curry and rice.

Or a quiche: I love quiche.

Or catch the end of the British asparagus season - steam or griddle and serve with poached eggs as a lovely starter or lunch. Could fit in with a 'british summer' meal which would of course end with strawberries.

SOmething like a lasagna could be made in advance, and just ovened when you want it.

A really nice dish is tagine with couscous, basically veg in a tomato sauce with spices such as cayenne and cinnamon, I just stick what ever in such as mushrooms, courgettes, carrots, peppers, cherry toms etc.
mushroom fajhitas, use those massive mushrooms cut into slices
Veggie curry is always nice and lots of recipes around, I particularly like paneer in a curry

I am not veggie either

Rose Eliot's cookery books are very good.
I might do the lentil and cheese loaf, served with my own mushroom sauce, potato gratin and a greesn salad.

Nigella's veggie chilli is lovely and good for guests as can be made ahead and dressed up with homemade guacamole, sour cream etc.

Homemade quiche with plenty of strong cheese, fresh eggs and seasonal veg. or grilled Mediterranean veg. or mushrooms.

Stuffed mushrooms or peppers.

Cauliflower, broccoli and macaroni cheese.

Crispy potato skins filled with cream cheese and hard cheeses, garlic, spring or other onions, chives, vegetarian chile, pieces of grilled vegetable

Potato pizza (recipes online)

Biryani, curry and the trimmings....yum

Salads, lots of different salads and jacket potatoes. Think home made coleslaw, beet root and lentil, tabbouleh, wild rice and roasted veg, tomato and mozzarella and basil pesto

Roast dinner or veggie toad in the hole.

Spinach and ricotta tart or pizzas.

Lentil or Aubergine or spinach and ricotta lasagne

Veggie burger chips and salad

Chickpea or lentil casseroles with onion, garlic, carrot, vegetable stock, diced potato - very easy if you have a slow cooker. Or use cooked, tinned pulses and just make it in a pan or the oven in 30- 60 mins.

Chickpeas are also delicious stewed on water and curry powder. Serve with rice.

Spinach and ricotta cannelloni
Aubergine parmigiana with nice ciabatta bread and fancy salad
Couscous with lots of lemon and mint, with griddled courgette ribbons and halloumi.
A nice risotto, e.g. stilton and broccoli

I'm a vegetablist.
One thing I make that loads of people ask for again is a spinach and feta filo pie.
Mix feta, spinach, pine nuts, eggs, salt, pepper, herbs, chilli flakes. Use filo to line a cake tin. Put feta mix in the tin. Cover with more filo and then bake.
