I just bought some Quinoa...

What can I do with it? Preferably things that are suitable for 9mo Ds but not essential

You can just use it like rice, or couscous, or put a cupful in a pit of soup/chilli/stew to thicken it up?

Make sure you rinse properly as sometimes can taste bitter if you don't.

I always cook it in stock, its not pleasant without some flavour added.

I chop up some red pepper,cucumber,spring onions and baby tomatoes, mix them through with fresh basil and a splash of white wine vinegar. Bit if black pepper and it's done. You could add feta, or chicken too.

I make a really nice salad with quinoa, spring onions, feta, sliced baby spinach & dressing of oil/lemon juice/cumin.

This is lovely, though your 9mo may not consider it to his taste...

I cook brown rice, puy lentils and quinoa separately then mix it all together and add a an oil dressing and caramelised onions. Serve with a spicy tomato garlicky sauce (maybe not for the bairn though).

Also do it with pomegranate molasses dressing and chopped walnuts and pomegranate seeds.

It is VERY good for you and contains protein and amino acids.

Summer easy recipes.....

Chicken thighs and legs, covered in natural yogurt and sprinkled with lots if tikka powder (straight forward in a tub stuff).
Oven cook for about 40 mins.

Baked feta-press dried mixed herbs into a feta block and drizzle with a bit of olive oil, put it in the oven for about 20 mins. Eat with above quinoa salad type thing or spread in crusty bread.

Prawns in olive oil and slice 2 cloves of garlic in the oil, put in the oven for 20 mins. Then have that with all of the above.

Jeez I'm starving!

Oh I forgot - have a look at this website called The Smitten Kitchen, I love her recipes and there are some good quinoa ones.

Use it for stuffed peppers, or there is a super Jamie Oliver 15 minute meal with chicken, feta and mango... Will see if I can find a link
