Soup! It's soup season! Can I have your best soup recipes please?

I have no blender or other contraption so all my soups are the kind with bits in. So....what have you got for me? Grin

I can smell Autumn....she's there...it's time to think on!

I am particularly interested in vegetarian and vegan recipes but meat is good too! Grin

i make this one, only i never have a celery stick, put in a teaspoon of each of the three spices and grate the carrots at the start so i don't have to blend the soup at the end - i don't like blended lentils, but i really like whole ones!

Get a hand blender! Makes awesome soup, I had butternut squash and ginger the other day it was delicious.

Spicy lentil with spinach, no blender needed. Think it's jamie Oliver's recipe - v nice if you have a cold too

Chop up a punnet of mushrooms.
Fry in a knob of butter til the juices run.
Add a dessert spoon of flour and cook for a minute.
Pour in chicken stock and a splash of milk.
Let mixture thicken.

Ah bugger it, I've just reserved a cheapo hand blender at Argos...it will be better to be able to vary the soups.

I love soup. I have to blend all mine though, as DP (yes, DP not DC) doesn't like bits.

I currently make curried butternut squash that has a tin of coconut milk in and carrot and lentil.

Hoping to try some new kinds this winter. That mushroom one sounds great!

I eat soup everyday- cold in summer and warm in winter. I don't follow recipes as such, just use what I have around. I do have a hand blender and like my soups smooth, but you an just chop bits smaller if you like.

Today I made two soups:

Courgette, onion, carrots and pumpkin (the pumpkin was the tinned variety but you can use fresh). With chicken stock (I always have some in the freezer). I used onion granules' garlic granules, cumin and paprika to spice it. And two whole chillies.

I also made a soup for the family for dinner tomorrow which is one I make a lot. Fry onion, add chopped carrots. Add a whole pack f washed RED lentils, add chicken stock, season with loads of cumin. I blend but you don't have to.

One I made loads over the last winter was a roasted vegetable soup. Onion, garlic, carrots, and butternut squash cut into pieces and roasted with olive oil in the oven. Then tip into pan with stock and cook. Again, I blend, but you don't have to. The roasted veg add a totally different flavour than boiled. I like it with chillies in too for a kick and sometimes add coconut milk. Or yogurt.

Over the summer I did a cold soup a lot with onion, courgettes and frozen peas. Cooked with stock. Blended and loads of chopped mint added.

Cheese soup - got this out of a M&S cook book so long ago that I can't remember the proper proportions.

Gently heat some bacon in butter so the fat runs and the bacon goes pale but not crispy. Add finely chopped onion and carrot and soften these. Then stir in a good tablespoon of flour and cook for @ one minute. Gradually add a pint of stock (I use stock cubes) with a tsp of marmite, 1/2 tsp of mustard & generous wallop of worcestershire sauce dissolved in. Add tsp mixed herbs or bouquet garni teabag. I find you have to be v careful with just a few tbs of stock at first but then it blends in fine. Simmer 20 mins, add large handful of grated cheese, serve.

We always leave out the cheese.

This recipe comes out every winter and it does warm you through.

Leek and potato - I like it much better unblended and just mash some of the potato to thicken the stock a bit.

Oh I am keeping this page! I make lovely soup, but it's a cupboard soup, standard, hardly any variation and a few new ones will be good to try. I love soup!

Winter veg soup I leave out the pearl barley (also the celery if I haven't got it), add a cubed a potato or two, some cubed squash if I have it kicking around and blend half of it as DH and DD prefer it chunkier. As my veg box has carrots, leeks, potatoes and parsnips in it all winter it's a good job DD and DH will eat a lot of it. I'm making it tomorrow as DD has decided it's cold enough to warrant soup again.

oh yes, and I also never use a celery stick as I never have one either. but mostly because it's vile. And before you say you can't taste it, it's a flavour enhancer, yada yada yada. I can bloody well taste it. Many a good meal has been ruined with the addition of fucking celery.

I found that if I softened some random veggies & bacon, thickened with flour and topped up with veg stock that I had a very good soup.

Another one I do a lot has potatoes, carrots, celery, leeks, pearl barley and/or lentils, with cabbage and peas added in the last few minutes.

Roast some veg, carrots, leek, onions, peppers, potatoes, mix in some rosemary, put in veg stock and roughly blend. Love this one.

Garlic and Harissa soup, it's an ottelenghi recipe can't link from my phone but it's a lovely soup, very fresh and great if you like a bit of heat.

I made my first soup of the season today. Roasted some squashes then added the flesh to some onions, garlic and chilli. It was a blended soup but tasted magnificent, really spicy.

Love Soup Season. Grin

Peel & roughly chop 3 sweet potatoes, 2 carrots and one onion. Cover with veg or chicken stock in big pan and simmer till veg is soft (about 30 mins). Cool slightly and blend till smooth. Add herbs (coriander or dill work best) and seasoning and bring back to simmer. Add a dollop of creme fraiche (although it's fine without, and healthier), and serve.
