after ten days of wine, chips and starburst I need some healthy meal ideas...

we are back from holiday, and on the brink of obesity/scurvy to the point where I am physically craving light, fresh tasting foods. Can anyone inspire my menu plan?

salad is out, sadly, (DC are not convinced it's a proper foodstuff)
I could definitely fancy some sort of veggie couscous though

Since we got back from holiday we have had...

Roast chicken with new potatoes, veg etc
Pasta with courgette and bacon
Baguette with cheeses and tomato etc
Jacket potatoes
Lots and lots of fruit

How about a creamy veggie risotto? Lots of leeks, onions, fresh herbs and roasted peppers on top?

Or my "go to" meal when craving fresh food is fish, with strips of cucumber, strips of raw carrots, lightly grilled courgettes, (all done using a y shaped veg peeler) all topped with mahoooosive amounts of corriander, red chillis, splash of fish sauce, rice vinegar and lemon juice

Do you like tofu? We had hot and sour tofu last night, which was the perfect antidote to a weeks' holiday :)

Yes, you need stir fry. With lots of coriander, chillis, lime etc. Or a Thai vegetable curry.

Or baked sweet potatoes with a mango salsa and soured cream - food of the Gods.

Or qaesadillas with homemade quacamole and a fresh salsa.

Or some balsamic roasted asparagus on top of salad leaves, with parmesan shavings.

Or tiny spring rolls with salad and a chilli dipping sauce.

all these ideas are brilliant, thanks. we have just had smoked mackeral with lemon and chilli for lunch, and I feel loads better for not having stodge. Paella for supper. am going to put lots of your ideas on next week's menu plan.

Roast courgette, red pepper, red onion, cherry plum tomatoes and cauliflower in olive oil then add a splash of balsamic. Make a tomato sauce using passata or tinned tomatoes, 1tsp balsamic, 1tsp worcestershire sauce, 1tsp sugar, 2tbsp red pesto and mix the roasted veg through this. Serve with cous cous which has been made with chicken or veg stock.

your thread title made me smile - reminds me of a holiday 10 years ago when we were self catering but I refused to cook. DS, who was 3 at the time, had sausage and chips every day for a week (default on the children's menu everywhere we went!), and the one day he had a roast dinner he had a sausage roll for lunch!
