What can I do with 10 tonne a lots of courgette.

We eat most things.

There is a great recipe for courgette fritters on Riverford Organics website. One is with feta cheese and is delicious and another gluten free one, also very nice. You can also make courgette cake, similar to carrot cake.

I love courgette sliced and fried with sliced mushrooms then added to pesto linguine - maybe add some brocolli too.

Cbeebies have a great recipe for courgette and carrot muffins on their website. The dc love them and hate both those veg normally.

I also think courgette fried in batter is yummy.

BBQ them, make courgette spaghetti with a spiralizer, my fav is griddles courgettes with puy lentils and feta, soup

We have a dearth too....

I made a nice courgette and potato soup the other week, very simple and quite tasty. My toddler loved it. Recipe here

This evening I made and have eaten 3 of these muffins.

They are delicious and have made an almost perceptible dent in our mountain of courgettes, which appears to be increasing daily - hope the DC like them!

I've also just ordered a Spiralo which I hope will use up a few more of the buggers.

Faye Ripley has a great salad recipe with peas, green beans, courgettes sliced thinly with a potato peeler... Mmmmmm

Slice thinly with peeler and add to pasta with chees

I used courgette as an alternative to pasta when I was low carbing. Sliced it with a potato peeler, put it in a frying pan with some butter, added onions, mushrooms, bacon and cream cheese for the sauce. Lush. Grin

Courgette, pea, onion, mint and potato soup made with chicken stock. Annabel karmel weaning recipe that we still use. Made it for lunch.

Slice with potato peeler, fry in butter with garlic, add to pasta,

Make into tempura with batter.

Cbeebies have carrot/courgette muffin recipes, and a courgette/ham/gruyere bake.

stuff with chilli cover with cheese .bake in hot oven 30m

grate into a well seasoned thick pancake batter ( 100g pl flour. 5tbs milk.1 egg). fry spoonfuls for 2 mins each side

picalili is good for using up courgettes and green beans

Madhur's prawn and courgette curry is my staple user-upper recipe. Simple spices; only faff is the salting of and water extraction from the courgettes, but that can be managed. For the record, I don't think you need the amount of salt she states.

Make lasagne, but instead of pasta sheets use layers of sliced courgettes

Courgette soup freezes well,add Parmesan and cream when defrosted.

Courgette fritters are very nice. Grate courgettes, squeeze out water and add to pancake batter (no sugar) with some nutmeg and seasoning. Fry small fritters and serve with tzatziki or a yoghurt/spicy dip.

Or oven roast cubes of courgettes with onion, tomatoes, garlic and peppers (and aubergine if you like) in olive oil. When cooked, add torn fresh basil and use as a pasta sauce (with a bit of grated mature cheddar on top) or as an accompaniment to meat or fish. We have this at least once a week in the summer, it is very easy and healthy.

roast veg as^^ but add squash. keep in the fridge and have hot/cold in pitta/sandwiches. roast veg shrink a lot so do more than you think you'll need.

freeze pieces to throw in pasta sauce/chilli/stews etc

lasagne layer sauce (fry onions,garlic ,courgette.simmer in tinned toms with loads of grnd black pepper) lumps of philly then pasta 2 or 3 times. end with philly and cheddar

Yes to fritters. Slice them into quarters long-ways then take out the seedy bit. Cut the slices into v small dice, or grate.

Put flour into a bowl and add eggs. Beat. Stir in the courgette, some chopped feta and some fresh herbs, maybe some milk. Fry little fritters, a couple at a time.

we then slice them length ways, sprinkle with sea salt and paprika and BBQ , so good, and fast!

I roast it in chunks with snipped up bacon, chopped garlic and olive oil & use as a pasta sauce too.

Brown, roast with garlic and thyme, then sprinkle over red wine vinegar and goats cheese or feta. Serve with crusty bread.
