Rhubarb help!

We've moved into a house where the last people grew lots of fruit & veg - there's a tonne of rhubarb now & I've no idea what you can do with it?? I'm trying to lose weight so looking for low calorie recipes - anyone any ideas?? Thanks!

Rhubarb crumble, but I don't think it's very slimming.

Sprinkle it with about 10g of brown sugar per 100g and maybe some chopped up stem ginger and bake it until it's soft, then serve with greek yoghurt or fromage frais.

Stew it slowly with some ginger and then freeze it in small quantities lovely defrosted, sweetened and then served with ice cream for quick pudding

similar to ouryve, I tend to put it in a pan with a bit of water, dark sugar and lots of stem ginger and then add it to cereal/yoghurt etc. I think you can use for fruit juice too

Rhubarb and ginger jam....

I just made rhubarb vodka too, goes lovely in ginger beer :)

I spent this afternoon making rhubarb and ginger jam. 5lb of rhubarb made 11 jars (assorted sizes) and there's more rhubarb to go!!!

Make rhubarb ice cream and give it away? It's unbelievably delicious but far from low fat...

Use google to find Delia's rhubarb crumble ice cream recipe, and ignore the crumble bit - leaving a very simple recipe whereby you bake rhubarb with lemon juice and sugar, stir it into cream and freeze it. Would make wonderful guest presents.

Baked oats for breakfast - two cups of oats, one of milk. One egg. Mashed banana, 3 or 4 sticks rhubarb cut small. Chunk of melted butter, teaspoon baking powder. Optional extras cinnamon, vanilla essence, chopped apple, other fruit. Could add sugar but fine without. Mix and bake for 30-45 mins. When cooled it turns into a sort of porridge cake.
