easy evening meal needed urgently!

I have a pregnant friend coming over this week for dinner and I stupidly offered to cook! she's a newish friend so I don't really know what she likes to eat but she says she says everything (bar banned pregnancy foods)

The big catch is that it needs to be something really easy to do as I am working and then willhave a toddler until 10 mins before she arrives!

any ideas?

do you have a slow cooker? you could bung something into that.

Pork shoulder with bbq sauce and can of cola always goes down well and no prep needed. Serve with rice, noodles, mash, baked potato - anything really

if on a budget
-scambled eggs with beans on toast+yoghurts/icecream with fruit/biscuits/honey for pud.
or
-3bean chilli-buy 3 cans of diff beans/chickpeas, one can chopped toms, add to an onion that you have fried+any veg you have time to chop, boil it to death on a high heat. eat with tortillas+cheese

if not on a budget,
-a posh omlette with smoked salmon+brocoli/asparagus+a dash of cream, followed by GU puds that you just bung in the oven
-or cabonara- boil any pasta/spaghetti, add frozen peas to water at end for extra veg. meanwhile fry an onion and some bacon, remove from heat,chuck in some cream and you're good to go.

thanks! yes I do have a slow cooker :-) the pork shoulder sounds amazing, as fits the chilli. how much bbq sauce do u use for the pork shoulder?

Another really easy slow cooker one (I have it in my slow cooker right now) is chopped up chicken, breast or thigh, a stick of chorizo, onion, garlic, a tin of butter beans, tin of chopped toms, some dried herbs and a chicken stock cube. No prep needed apart from a little chopping. Lovely with crusty bread and/or rice.

I normally use Paul Newmans BBQ sauce in the glass bottle. Glug it over the pork shoulder then pour the cola (not diet) into the slow cooker. Cook for 7/8 hours on low and then shred the pork mmmmmmmmmm

I was thinking of a chicken and chorizo based thing but was worried as she is pregnant and not sure how strict she is.. (I know the chorizo is fine cooked but didn't want to make her uncomfortable)

I'd be lazy and look for pasta dishes. You can easily fancy them up with fresh pasta and a nice sauce, chuck a few veggies in and a garlic bread and bobs yer uncle!

I'm tempted just to do chilli or fajitas! just wanted to cook something nice as she's had a rough time lately. Normally I'd have longer but dh is away so I have very limited opportunity.... would macaroni cheese be really crap offering?

I would say that really good macaroni and cheese would be great, with a salad or something to make it more of a meal.

OMG I would looooove someone to make me macaroni cheese. I had a friend who used to make the best old-fashioned mac and cheese but she moved away Sad It's one of those things that's too faffy for one (DH hates it). Make the Mac!

I am making the Mac :-) if she doesn't like it she can eat toastand I'll have double portions :-)
