I am bored of my vegetable mainstays.

I seem to use courgette and / or aubergine in about 80% of all the meals I make.

And peas and sweetcorn are my freezer staples.

What do you use most. I'm hoping to be inspired by other peoples habits.

Carrots with virtually everything.

Also green beans, broad beans and peas all mixed together.

My favourite vegetables are the brassicas - tenderstem broccoli, purple sprouting broccoli, cauliflower, cabbage, spring greens. I just love them as a side dish, plain steamed usually, occasionally a bit of butter.

I don't make enough vegan food, but my children can be a bit iffy about veg (they tolerate them but don't love them). I wish I could be faffed to cook separate adventurously veggie things for dh and I.

Carrots, onions, and/or peppers go in, peas/green beans go on the side. I'm stuck in a rut too.

Carrots and brocolli for the kids
Can stretch to cabbage
DS will also have peas, sweetcorn, mange tout, baby corn
Dh and I have onions, peppers, mushrooms, cauli, leeks, pak choi, swede, turnip and courgettes.
I love french beans but no-one else does.
For 2 weeks in September we fight over Granny's runner beans Grin

During the winter we eat lots of fennels (raw), cauliflower, artichokes, broccoli, cabbage.

In the spring/summer: peppers, cucumber, courgettes, aubergine.

Staples: green leaf salad (any kind), tomatoes, carrots.

Ah, in the spring lots of asparagus, steamed with olive oil and pepper. Preferably dipped in soft boiled eggs.

I cook lots of food like casseroles and 'hide' vegetables like mushrooms, courgettes in there, which otherwise would not be eaten.

Asparagus - with nothing or anything definitely my absolute current favourite, always have carrots, onions, garlic, celery, but usually buy veg to go with the meal I'm making, so it was leeks and celery in a blue cheese risotto Friday, asparagus and cucumber with ham hock potato patties Saturday, new potatoes with lettuce, roasted onions and boiled carrots with roast pork yesterday, rainbow chard with quinoa tonight. Eat lots of salad, like beetroots randomly through the year, often roast a big scoop of peppers with onions for a salad. Don't eat much corn!

Carrots and peas are the general ta-da that'll do veg along with sweetcorn. Mediteranian (sp!) Veg stir fried is dps favourite when i make it but it looks foul so i don't do it often Blush we have loads of birds eye type micro freezer veg bag things Confused with broccoli spinach green beans and sweetcorn etc that live in the freezer.

At this time of year I eat asparagus with pretty much everything.

I always have butternut around - roast it with other veg as a dish in itself, or boil/steam (then sometimes mash) as a side dish for regular food. In winter I make soup with it a lot. Or roast it as a side dish for roast chicken etc.

boiled carrots/courgettes/peas/corn/broccoli are our standard, every day boring stuff.

Avocado is a regular for us, as are peppers. Regularly just have avo, pepper and tomato salad as a side dish, or turn the peppers and tomatoe into salsa to serve with lamb or steak.

Oh, and I often roast tomatoes to have with pasta - alone or with bacon/avo/cheese.

Onions, carrots, broccoli, peppers, tomatoes, cucumber, salad leaves, lettuce, cabbage, spinach, sweetcorn, peas...

And, in season, brussels sprouts, courgettes, butternut squash, corn on the cob. And the odd bit of celery, but only cooked because I think it's vile raw. DS1 sometimes eats a bit raw, though.

All of us, with the exception of DS2, love veg. DS2 things veg are evil.

Oh, and asparagus! Only in season, though. I object to buying it at a premium price after it's been flown from the other side of the world, only to find that it's stringy and bland.

Every week i buy about half a kilo each of the following veg:
Onions, red and white
Courgette
Celery
Celeriac
Carrots
Cauliflower
Broccoli
Cabbage
Boston beans
Squash
Aubergine
Fennel bulb
Leeks
Garlic
Tomatoes
Iceberg lettuce - one head
Little gem lettuce -two
Cos lettuce - two
Butter leaf lettuce - one
Cucumber- one
Rocket, and sheeps lettuce - bag 250g
Beetroot
Red peppers (3 a week)
Chilli peppers (about 50g)
Brown mushrooms 250g
Potatoes (about 3kg)

And I always have the fresh Herbs growing in pots:
Mint
Fennel
Thyme
Basil
Parsley
Coriander

Frozen peas

I make chilli with lamb and aduki and kidney beans
Chicken thigh curry with lots of veg and lentils
Tagine vegetable with chickpeas -not a favourite of most :( I love it!
We have veg omelettes with herbs
Salmon with veg
Tuna salad
Mushroom soup and
Minestrone soup with all veg remaining.
Every month we have puy lentils with veg and lamb hocks casserole
And pork with carrots, red onions, apples and pears casserole

It's not a very varied diet, in that we have the same things every 10 days or so, but I think it's healthy.

Broccoli, carrots, tomatoes and mushrooms are probably used most often, as they are around all year, but this time of year also lots of asparagus and spring greens. DD loves eating raw peas out of their pods.

I like lots of Chinese-style leafy greens, so grab them whenever I can find British-grown stuff, otherwise make do with fresh spinach and kale.

Butternut squash and sweet potatoes also go down well with the children and are very easy to use (roast, in soups etc).

Salad, salad, salad. I'm sure DH thought I was joking when I told him when we moved in together that I like a salad with every meal except breakfast. The "extras" of the salads change with the seasons though, eg:
Winter: mizuna, orange segments, parmesan, walnuts
Spring: lamb's lettuce, cucumber, fresh peas, mint (or my favourite: mint, griddled courgette, buffalo mozzarella)
Summer: sweetcorn, red peppers, roasted aubergine
Autumn: roasted butternut squash, goat's cheese rounds, bacon

Carrots & parsnips and red onion - roasted in the oven
carrots- steamed
Broccoli - steamed
onions in everything but particularly curry and stir frys
peppers - stir frys or rice dishes
peas - as well as just as a side dish with fish usually- i also chuck them in ommelettes and currys etc
sweetcorn usually just straight out the tin or fresh cobs done as corn on the cob
cabbage - steamed and with some wholegrain mustard stirred in.
Cauliflower - in curry, or plain steamed or with cheese sauce
Also grate a pile of carrots in bolognaise
turnip (swede in england?) mashed with mashed tatties and haggis :)
I make a nice soup as well with spring greens or spinach or any green leafy stuff and frozen peas - Mmmmm.

We are massively stuck in a rut too! Each week I buy the same veg:

Celery (to go in soup and in a bolognaise/chilli type dish)
Peppers (in a bolognaise/chilli type dish and in a curry)
Mushrooms(in a bolognaise/chilli type dish)
Carrots (to go in soup and with the roast)
Brocolli (to go with roast)
Parsnips (to go with roast)
Onions (to go in everything)
Frozen peas and sweetcorn (to go with any chicken kiev type meal)

So so bored of it all, but then again I am bored of our entire menu, but am limited to food that can be prepared (reheated) inbetween getting into the house at 5.50pm and the kids teatime at 6pm!

Onions, carrots, peppers, cucumber, tomatoes, green beans, broccoli, cauliflower, PSB, lettuce, sweet potoato, mangetout and baby corn (latter is a BIG treat!).

Freezer veg: peas, sweetcorn and green beans.

To a lesser extent (as in mainly DH and I like these): asparagus, courgette, parsnips, avocadoes, aubergine, spinach, butternut squash, mushrooms, radishes, chard.

Simple veg skewers are nice if you want to vary side dishes, also veg stir-fry. Roast veg is fab - summer (roast asparagus) or winter. DS2 and I fight over the roast carrots and sweet potato wedges!
