What do you put in your homemade burgers?

I love eating homemade cheeseburgers but am out of ideas on what to put in the actual burger. Normally mix the meat with an egg, some shallots and some mixed herbs. But there's more to burgers than that isn't there?

An in the bun melted compté (am in France) and a slice of tomato with ketchup.

Please inspire me.

caramelise the onion first?

try pork and apple maybe?
Grate cheese into the mixture?
Mushrooms?
Courgette?

We often add dried chillis into the mix along with herbs and onions.Worcester sauce is also a nice addition.
A slice of bacon is a must and have discovered that the best cheese to add is the nasty orange cheapo slices from the supermarket!

Mustard, good idea.

If its the lovely butchers mince its only salt, pepper and thyme
Supermarket I tend to go onions, garlic, tomato purée

Grated carrot and apple(squeeze the juice out though) and fresh chives. Salt pepper obviously.

We add Stilton in the middle :)

It's just mince, onion, breadcrumbs and egg in our house, with whatever herbs/ spices we want.

If the mince is really good then I usually just use salt, pepper and onion in beef burgers.
I have done some with Reggae Reggae sauce mixed in, and some with BBQ seasoning which were tasty.
On them I love;
blue cheese mayo,
red pepper relish,
cheddar cheese and crispy bacon,
Dijonnaise, cheese and gherkin,
hummus and olive,
caramalised onion and goats cheese.
I also like to use sweetish bread for burgers, brioche rolls are good.

Homemade burgers are a favourite of my dc. I mix tomato ketchup and hp sauce in with the mince. And I fry chopped onion before adding it.
I put out a plate with shredded lettuce, sliced tomatoes, sliced gherkins, sliced chillis, cheese and coleslaw and they have fun constructing teh tallest burgers they can.

Instead of breadcrumbs try crushed cream crackers, it makes for a much less dense burger.
Also, not very gourmet, but I find a big squeeze of ketchup makes them really tasty!

Mince the beef

Mix with egg yolk, tiny dollop of mustard, pinch of ground cumin, ground coriander.

Hiya,
I put fish burgers (salmon and potato), chicken burgers or shami (lentil and lamb mince) kebabs. That way we have a good variety with our healthy homemade chips on a weekend night!

I add a spoonful of Dijon mustard, and minimal amounts of chilli flakes, cumin and coriander. You don't taste the spices, just a general tasty warmth.

As an American, I have always found the burgers here to be very strange - why add all those fillers? The best burgers come from freshly ground chuck beef, salt and pepper. The mince should be gently handled to prevent the burger from becoming a stodgy lump. Grill with some cheese on top, put into a brioche bun and that is it.

For beef burgers, a spoonful of dijon mustard makes a decent burger into a great burger! And crushed cream crackers give it a lovely texture. I actually can't fault Jamie Oliver's recipe for a burger in his Ministry of Food book. They are AWESOME!

I saw a great idea on TV a while back: a spoonful of Camembert in the middle of the meat mixture before cooking! Haven't tried it yet, but sounds fantastic.

For making the meat burger itself, I like to add finely diced red onion, finely diced red chilli, squirt of ketchup, teaspoon of mustard, splash of worcester sauce. I also don't use lean mince but rather something a bit fattier (otherwise I find they fall apart) and I try to allow time for them to chill a bit in the fridge before cooking, again to encourage them to keep their shape.

In the assembled burger, I like to put slightly melted brie and a slice of lean bacon. Mmm. Sometimes some rocket. I like the idea of msuhrooms upthread too.

I live in France too, and I really hate the burger buns you get here - so synthetic, it's impossible to get nice ones! I make my own now, it's not too onerous. There are loads of good recipes on the web.

Pork mince makes nice little burgers with grated ginger and garlic and finely chopped coriander

Many years ago I used to make enormous beef burgers with a slice of pineapple inside, nicer than it sounds!

Mix beef mince & pork mince. Add onion, peppers and breadcrumbs plus dollup of tomato sauce. Delicious!

Just mince beef, dried oregano and a pinch of sea salt. They cook beautifully, then you can add the extras on with the bun: cheese, onions etc.
