I have just discovered the pleasure that is aubergines after always assuming they would be foul.
I made a lovely aubergine parmiagiana last week, and now they are 50p each in Lidl so I bought a bagful.
So, what else can I do?
apart from fry them in copious amounts of olive oil and scoff straight from the pan
