Do you have a tasty, lowish fat, vegetarian aubergine recipe?

DH bought a bag of value aubergines that I need to use up before they go off. We like aubergine but only if it is swimming in lots of olive oil or cheese. I'm on weighwatchers so can't really do any of our normal recipes. Any idea what I can do with them?

Dip chunks into beaten egg then cost in breadcrumbs. Bake for about 29 mins. I have them with pasta and tomato sauce then. Also good in a veggie curry. Fry them with mushrooms or whatever else you fancy, then add tinned tomatoes, chili powder, turmeric, cumin, garlic and simmer. Or curry paste/jarred sauce if you prefer if course!

Aubergine Cannelloni. dry fry slices til browning, meanwhile make a chunky tomato sauce, with Courgettes, peppers etc. lay aubergine slices in a casserole, layer spinach leaves on top, add tomato sauce (it does need to be quite thick, and wrap the aubergine around the filling. Top with more tomato sauce, a grating of cheese and bake. DeliciousSmile

Use on vegetable kebabs? Chop into chunks (with any other veg you may have around, like mushrooms, courgettes, peppers etc) and marinade in soy sauce, vinegar, chilli sauce & sesame oil (or whatever you have around) for a couple of hours then put on skewers and grill. You can also add chunks of marinated tofu (or meat or fish if you're that way inclined).

I second caponata. You can freeze it, eat it as a pasta sauce, or have it as a kind of chutney on cheese/cold meats etc.

I like them in pasta, you could make a vegetable bake with mushrooms, cherry tomatoes, green/red pepper, etc add salt, pepper, garlic and drizzle of olive oil. When ready add the veg to pasta ... I normally add chorizo and/or chicken but should still be great w/out for veggie version.

Thinly slice and bake in an oven for 10 mins, a bit more if they haven't got that 'soggy centre'.

Layer in a lasagna dish with passatta, dried herbs and whatever you have around - onions and mushrooms, but cook them first.

Top with low fat yoghurt and breadcrumbs if you have enough calories/points.

Bake for 20 mins.

Recipe 2 - even simpler
bung the whole thing in the oven for 15-20 mins - it will collapse. Let it cool and take all the mushy aubergine out to make a dip. You can add garlic, spices, mayo (again depending on calories) yoghurt, humus

marking place due to dd2 not wanting to eat meat and this is one of her fav vegs so on weekend when she vists I can copy all and try some out with her can you freeze Aubergine Cannelloni pregnantpause

yes you can freeze...
for veggie daughter what about veggie spag bol with fake mince and lots of veg including aubergines, mushrooms courgette ...I also freeze this to make micro ready meals and freeze the sauce separately if I want to cook pasta on the day.

thanks Contradiction though I she doesnt like the fake mince and mushrooms either. The fake mince is partly because of the texture I think and mushrooms have been a no go for years as well as any thing spicy. I found a great little cook book that she is can take back to her dads so hoping to try out some of those with her. But the book doesnt mention if you can freeze any of the stuff.

Sadly her dad is not very supportive so I want to stock up before she arrives so she can some back with her and pop in freezer for meals.

Slice longways, grill (I do it for about a minute in the George Foreman.

Then use like bread - make a sandwich! Salad, with beans and bean sprouts and mozzarella is our fave. You could leave out the cheese. Hummus is good too, and there are lower fat versions. Or spread slices with daal and top with whatever veggies or salad you like (we usually go for sliced tomato and rocket).

I don't see why not- I would freeze it before adding cheese and putting in the oven.
It's also nice to halve an aubergine, roast it, scrape out a bit, and stuff with goats cheese, quinoa and pine nuts, put back in oven while cheese melts and nuts brown. this is not freezable though .
