My DD is 6 and turns into a bit of a monster when her blood sugar is low. You know, that 3 hours after eating, not happy with the world, "I hate you!" feeling. I'm looking to increase the number of ideas I have of things to feed her that will bring her blood sugar back up, but not spike it so badly that she's down again before the next meal, usually dinner, which adds tiredness to the equation too.
She loves her carbs, and will eat toast until it comes out of her ears. Which I'll let her have for a snack if there's a thick layer of peanut butter on it. She doesn't like cheese as a snack in itself, but tolerates it when cooked in things.
Any great ideas? Happy for links to recipes to bake something as well.
I'm npt sure how 6 year old friendly these are, but these are my low carb snacks:
Plain full fat greek yogurt Scrambled egg. V good with spring onion, chilli and grated cheese mixed in. Cold meat, maybe with a spoon of coleslaw ontop Olives Nuts Guacamole/pate on veg crudites Erm, pork scratchings
Shame she doesn't like cheese, that is my favourite and so convenient!
Crustless quiche "muffins" are good too. Fry up finely chopped veg (leeks, broccoli, peppers, mushrooms, onions, sweetcorn whatever she likes) and maybe some ham/bacon/cooked salmon. Put in muffin tray holes to 1/3 fill each hole, top each muffin hole with grated cheddar. Then whisk up eggs and a slosh of cream, salt and pepper and pour over the cheese. Bake at 180 for about 30 mins or until "set". They will rise up beautifully in the oven and then sink a bit once cooled. I find 2 eggs does 4 muffins. DH and I eat 4 eat for lunch with some salad, so 1 makes a nice sized snack. They freeze fine too.
I like the sound of those quiche muffins. I could get her to help me choose the fillings, so she'd probably be more interested in trying them. I haven't tried pâté on her, but it's a good idea, even if just to see if she likes it. Boiled eggs are good too, I just need to remember to make a bunch and store them in the fridge until needed. Scotch eggs. There is a fab sounding recipe here that is on my to try list. Instead of breadcrumbs, roll in parmesan and herbs. Depends how low card you want really, there can;'t be many carbs in the breadcrumb coating on shop ones!
Make some savoury muffins? Or celery spread with peanut butter. Have a look on a list of low GI foods. I like hard boiled eggs so have a few of those in the fridge. Cheese and an apple is one of Dd's fave snacks esp if I peel and slice the apple then spread the slices with soft cheese.
