I started yesterday:

Sat: Roast chicken, jack pots, cauliflower & white sauce
Sun: Modified Jamie's 30 min chicken pie (leftovers), with berry crumble & custard
Mon: Lemon/ginger chicken (scrapings of leftovers!) stir-fry with noodles
Tues: Slow cooker beef in ale with home made bread
Weds: Jacket pots and fillings
Thurs: HM soup - carrot, celery, peppers, lentil & HM bread
Fri: fish pie

Today- veg filo pie

Monday-mushroom risotto

Tuesday- red lentil and chickpea soup

Wednesday- peppers stuffed with veg and mozzarella

Thursday- chirizo and pork belly stew

Friday- bean chilli/hm refried bean s.

Saturday- chicken casserole from freezer

Sunday- maybe fish pie, maybe moussaka.

Although the meals never seem.to land on the planned day and if past is anything to go by, one meal will be ditched in favour of beans on toastGrin

Yesterday - macaroni cheese with camembert in, with salad - it was gorgeous!

Today - veggie haggis (which we didn't get around to eating last week), mashed potato and swede, roasted balsamic red onions, carrots, cabbage, gravy

Tomorrow - veggie chilli which is cooking in the slow cooker now

Tuesday - jacket potatoes, salad, veggie sausage rolls, coleslaw

Weds - pizza and salad for the dds; dp and I going out so no idea yet!

Thursday - probably pasta Arabiatta

Friday - chickpea curry or dhal and rice/salads

Saturday - Spanish omelette maybe?

Sunday - veggie shepherd's pie

Oooo, macaroni cheese with camembert? Yum!

I've done a monthly plan which includes:

Nachos
Fish & Chips (treat)
Baked spuds
Grilled cheese & tomato soup
Veg Risotto
Veg Kiev & Chips
Pizza
Meatballs & chips
Soup & crusty bread
Boiled eggs
Pasta & sauce
Pitta pockets with cheese/ tuna & salad
Quesadillas
Veg Spag bol
Toad in the Hole
Enchilladas
Mexican lasagne
Tuna pata Bake
Roast something
Kedgeree

grockle (are you in the sw?!) what do you do to make veg risotto, veg kiev & mexican lasagne?

Very quick meals this week as dh ill/I'm busy. Basically salad followed by salad (will try to vary the sort of salad) as we all like it.


Mon = chicken, leftover stuffing, baked mushrooms, rocket & parmesan salad and baguette.

Tues = american style burgers with gerkins/mustard, corn on the cob and salad on the side (kids will have veg sticks and I'll have rocket & parmesan and any leftover mushrooms).

Wed = pork chops, garlic bread and pineapple & sweetcorn salsa (with red onion and chilli)

Thur = takeaway as no one will get home before 6pm and the kids are young and won't be able to wait for food.

Fri = chorizo, red onion, and harissa tart with, guess what! salad again

Lunch for me this week is tuna salad. Salad is the one thing I don't really get bored of as there are so many varieties.

Today: Roast chicken, stuffing, mashed potato, gravy and peas
Tomorrow: Chicken salad (from leftovers) with chips and chutney
Tues: Last of the chicken cooked with mushrooms, onions and sundried tomatoes in a bit of cream with pasta and parmesan
Wed: Rest of the mushrooms in a mushroom risotto with remainder of salad
Thurs: CookedJacket potatoes with insides scopped out and filled with tuna, cheese, spring onions and mayo and baked in oven
Fri: Remainder of tuna with remainder of cream from Tues and some capers, lemon juice and spring onions (from yest) with pasta
Sat: Homemade pizza and garlic bread

Today - Pie, mash, cauliflower Cheese and carrots
Tomorrow - Cottage pie using leftover mash and carrots
Tuesday - nuggets, chips and beans
Wed - Jacket potatoes with chilli and creme fraiche
Thurs - Spaghetti and meatballs
Fri - risotto with whatever looks like it needs using
Sat - burgers with onion rings

Camembert is the way forward!

I've also read about using a baked camembert as a pasta sauce, so that's on my to-do list now as well. I think the dds would like it with some broccoli and dp and I could try it with spinach, maybe?

Veg Kiev are frozen Blush - they were on offer when I was desperate but I really don't fancy them & keep putting off eating them!

Veg risotto - gently sautee on chopped onion. Add rice til glossy & transparent. Add other veg (diced peppers, mushrooms, celery etc) then add enough stock to cover it. Keep topping up stock til the rice is cooked. Should be stodgy & creamy. Sorry for lack of quantities.

Mex lasagna - You will need veg chilli, tin of refried beans, tortillas (or sheets of lasanga), plain yoghurt or sour cream, cheese
Make like normal lasagna layering chilli, tortilla, refeid beans then sour cream/ yogurt til you get to the top, sprinkle with cheese & bake on 180 for 20 - 30 mins.

wed - pasta bolognese and garlic bread
thurs - pizza with salad
fri - fish pie, veg and bread and butter
sat - frittata
sun - chicken korma with rice and naan

Wick wac- Courgette filo pie was from Hugh fearnly a Veg book, mix 3grated Courgette with 75g rice, half diced red onion, grated cheese 75g, two eggs,handful of parsley and dill, layer filo pastry sheets in baking tray, brushing with butter, put filing in, wrap and bake at 190 for forty mins.

My risotto is as the veg one above, but I use chopped button, chestnut and porcini mushrooms, and I add the water from rehydrating the porcini a to the stock to make it more mushroomy. About 300g of arborio rice to 1ltr if stock.

The red lentil soup is on bbcgoodfood website, can't link as on phone, but when I google red lentil and chickpea soup it comes upSmile

the plan so far is...............

mon - prawn curry & dahl, rice & naan
tues - veggie lasagne
wed - nut roast, sweet potato, cauli cheese
thurs - smoked salmon & gnocci bake
fri - veggie chilli, tortillas, guacamole
sat - homemade pizza
sun - not sure yet - maybe pasta puttanesca

This thread has just made me plan the following, now I need to shop..

Monday: going to a friend's, she nearly always does sausages or lasagne
Tuesday: roasted minty lamb on couscous, salad
Wednesday: omelette with chorizo, chicken, more salad, garlic bread
Thursday: macaroni cheese, broccoli, peas
Friday: some sort of curry and rice and dhal, tomato salad. I'd like to try a fish curry, never made one before, but if not adventurous will do my usual chicken curry
Saturday: fishcakes, veggies
Sunday: turkey and ham pie (turkey and ham is sitting in the freezer, remains of Christmas roasts) with gravy, veggies and roast potatoes.

And I'll make an apple and mincemeat tart to use up the mincemeat too, and keep the kids happy, and me.

Mon - Chicken curry and brown rice
Tue - spag Bol with wholewheat spaghetti (will make triple of the bolognese and freeze some portions)
Wed - salmon, noodles, stir fried veg and soy sauce
Thurs - sausage, mash and beans
Fri - Leftover freezer party food (mini pies, chinesey bites etc) from a gathering we had last week! Ds will probably have a lasagne also from freezer.
Sat - pub meal (we go out to the local for tea once a fortnight!)
Sun - toad in the hole with green veg and onion gravy

Monday - chicken and left over bits quiche ( just finished cooking)

Tues - carrot and lentil soup

Wed - mince with lentils and beans, with roast potatoes

Thurs - going out for anniversary curry! Yay :o

Fri - spaghetti bolognase (using mince from wed)

Sat - lasagna (last of the mince)

Sunday - something involving sausages

Tue: chicken and sweetcorn soup with prawn crackers (more leftovers)
Wed: toad in the hole with veg
Thurs: macaroni cheese
Fri: beef burritos
Sat: roast onion tart/quiche affair

*Wed-sat meals may appear in any order

I do my veg risotto in the oven - bloody genius. Cook veg for a bit, add 300g rice & stir around for a minute or two, then 700ml stock - lid on & put it in the oven for 20mins at 180.

I'm a meal down already this week - had planned to use beef leftovers for tomorrow's cottage pie but had friends come round so we ate it all up instead.

Mon - squid putanesca (slow cooker, it's yum)
Tues - mutton, pearl barley & veg stew
Weds - butternut squash & fennel lasage (HFW, also yum)
Thurs - savoury veg crumble
Fri - dp & I are out, the kids will have something like eggs on toast.
Sat - something meaty because DP will cook
Sun - roast again!

Today - roast without the meat - dd and I both not fussed about meat. And we had 2 YPs each to replace it...
Mon - salmon with new pots and broccoli
Tues - freezer roulette
Wed - late home night, something on toast with pudding
Thurs - pasta ( probably pesto for dd, stilton and walnut for me)
Fri - dahl and rice

For my lunches, have soup in freezer done for week, just need to remember to take out each day. Choice of butternut, cauliflower or leek and potato
